Smoked Gouda Cheese Burgers With Caramelized Onions

Who doesn’t like Caramelized Onions on their burgers? Who doesn’t like Cheese Burgers (besides Hubby)? Imagine the smokey, creamy goodness of Smoked Gouda Cheese melted over a big burger that is topped with sweet caramelized onions. I don’t know about you, but my mouth is watering just thinking about these heavenly burgers. Yeah – so glad it’s finally spring and the trusty grill has been called into action once more.

These burgers are huge – and juicy. Word of warning – serve with plenty of napkins and you might want to consider one of those “lobster” bibs. We are talking burgers that are a little more than half-pound here. Kiddo was able to handle one, plus about a quarter of mine. Hubby almost made it through two of these bad boys. We all agreed we were stuffed long before calling it quits, but the burgers were so doggone good, a little voice kept saying “just one more bite”.

Smoked Gouda Cheese Burgers with Caramelized Onions
Caramelized Onions
2 large onions or 3 medium onions, halved and sliver cut
1 teaspoon sugar
3 tablespoons butter

Peel and cut onions one at a time in half lengthwise. Cut each half into thin slivers. Set aside and repeat with remaining onions. While this may seem excessive, the onions will slowly cook down to the perfect amount.

In a large non-stick pan, melt the butter over low heat.  Add onions and sprinkle with sugar. Toss to coat onion slivers with butter and sugar.

Cook onions until caramelized, about 30 minutes, stirring every minutes or so. Remove from heat, cover and keep warm until ready to use.

Smoked Gouda Cheese Burgers
2 lbs ground beef (80 percent lean), preferably Organic Grass-Fed
2 teaspoons Worcestershire sauce
1 teaspoon Seasoned salt
6 slices Smoked Gouda cheese
6 Kaiser rolls, buttered and toasted in a skillet

Combine the ground beef, Worcestershire sauce and Seasoned salt. Mix by hand just until combined (be careful not to over mix).

Shape into six patties that are about 1 inch thick. Push a ½ inch indent into the center of the patty to prevent the patty from swelling into a dome.

Heat grill to medium-high. Grill the burgers until golden brown with a slight char on the first side, about 4-5 minutes. Flip and grill other side for 4-5 minutes for medium or until cooked to desired degree of doneness.

Flip burgers one last time. Top with slices of Smoked Gouda Cheese. Lower grill to medium, close lid on grill and allow cheese to melt nicely – about 2 or 3 minutes. Once cheese has melted, remove burgers from the grill and place on bottom half of toasted buns.

Add a heaping tablespoon or two of onions on top of burger. Top with remaining half of roll.

If desired, burgers can be served with lettuce and slices of tomatoes, although not necessary as these smokey, cheesy burgers with caramelized onions don’t need much else.
