For Valentine’s Day a few years back, I wanted something “romantic” for supper. At the same time, it had to be something simple that my guys could whip up with very little supervision. I had been ill, and cooking was just not in the cards. It’s times like this that I am grateful for processed foods that can easily come to the rescue. Start with something from a box in the freezer section of your supermarket, add a few fresh ingredients and there you have it – Super Easy Scampi. Yum! This “cheaters” Shrimp Scampi is colorful, unbelievably delicious and can be gracing the table in about 20 minutes.
Super Easy Shrimp Scampi over Pasta
2 boxes Gorton’s Shrimp Scampi
1/2 lb Angel Hair Pasta
1/2 Cup Zesty Italian Dressing (Newman’s Own is what I use)
3 tablespoons Butter
1 1/2 tablespoons Lemon Juice
1/2 teaspoon Roasted Garlic
1 Lemon, cut into wedges
Bring a pot of salted water to a boil. Maintain rolling boil in pot.
Prepare Scampi: Arrange FROZEN shrimp in a large, non-stick skillet. Cook over medium heat, stirring frequently, about 10 minutes. Add Zesty Italian dressing. Stir to blend. Add butter and garlic. Continue to cook until headed through. Keep warm until ready to serve.
Cook Angel Hair pasta al dente – about 4 minutes. Drain well. Place pasta in a large serving bowl or pasta plate.
Remove shrimp from sauce and set aside. Pour sauce from skillet over pasta, toss to blend. Top with shrimp and serve with lemon wedges on the side.
