Don’t you just love it when National Whatever Day works with your taste buds? I’d rather have Blueberry Pancakes than Figs and Dates any day. No offense to those who feel otherwise.
Wait till my guys see what I have cooked up for breakfast this morning. Yum!!
Blueberry Pancakes
1 pint blueberries
2 tablespoons unsalted butter
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 ½ teaspoons baking soda
½ teaspoon salt
2 large eggs, lightly beaten
1 ¾ cups whole milk
¼ cup butter for frying
Rinse blueberries and place on paper towels to drain.
Melt the butter in a small dish in the microwave until just melted, about 20 seconds to start, adding 10 seconds at a time until fully liquid. Set aside to cool.
In a large bowl, sift together the dry ingredients: flour, sugar, baking soda and salt. Stir well to blend.
In a small bowl, lightly whip eggs. Set aside.
Create a well in the center of the flour mixture. Pour the eggs, milk and 2 tablespoons of the melted butter into the well. Using a fork, gradually drag the wet ingredients outward into the dry ingredient. Once all the wet ingredients have been pulled, gently fold to blend.
Let pancake batter rest for about 10 minutes.
While the batter is resting, heat a griddle to medium heat. Lightly oil the griddle with a little butter.
Using a ladle, pour batter onto the griddle to form desired size pancakes. (I tend to go with small pancakes, Hubby make giant pancakes). Make sure to leave enough room between cakes for easy flipping.
Immediately sprinkle blueberries over the tops of the pancakes, assuring blueberries in every bite.
When the batter is set, and bubbles begin to form, gently lift the pancake to check the bottom. If the bottom is golden (about 2 minutes), flip and cook the other side for about 1 minutes.
Plate pancakes on a platter, overlapping if necessary, and hold in a warm oven.
Repeat until all the pancakes have been cooked.

Enjoy with Maple Syrup and country sausage patties.
