Do you adore wonderful, tender, flavorful potatoes? So bright and colorful – the perfect accompaniment to many a main dish. Potatoes are great to bring to a potluck, too. Especially casserole and crock pot potatoes – they travel so easily!
We love Italian foods – especially those of the chicken and pork variety. These yummy potatoes would pair nicely with my Lemon Parsley Chicken with Garlic or my Savory Sensational Chicken Scaloppine. As for pork recipes, these potatoes would rock alongside my Moist Italian Breaded Pork Chops. Oh the list can go on and on. I’m getting hungry just thinking about it! So often, when cooking up an Italian favorite, it’s served with a side of pasta or rice. Potatoes are a welcome change.
When I discovered this beauty of a recipe over at Food.com from Robyn’s Kitchen I knew it was a keeper. She has a real hit on her hands as far as I’m concerned. Hope you enjoy!
Crock Pot Italian Herb Potatoes
Italian Seasoning Mix
1 tablespoon Black Pepper
1 tablespoon dried Basil
1 tablespoon Garlic Powder
1 tablespoon dried Marjoram
1 tablespoon Onion Powder
1 tablespoon dried Oregano
1 tablespoon Red Pepper Flakes
1 tablespoon dried Rosemary
1 tablespoon dried Thyme
In a bowl, combine all herbs and seasonings. Mix until well-blended. Place seasoning blend into an airtight container or spice jar. Can be used immediately or stored for later.
Crock Pot Potatoes
6 medium Red Potatoes
1/4 cup Water
1 1/2 tablespoons Italian Seasoning (Above)
1 teaspoon dried Parsley
4 tablespoons Butter
Wash and pat dry potatoes. Cut potatoes in half lengthwise, then into chunks about a quarter of an inch thick or so. Place cut potatoes into crock pot.
Add water and sprinkle the Italian Seasoning and parsley over potatoes. Stir to distribute seasoning into potatoes.
Cut butter into pieces. Scatter cut butter over top of potatoes.
Cover and cook on LOW for at least 5 hours or until tender.
