Today is National Tortilla Chip Day. I’ve already given you easy homemade chips. Now we need something to top them with. I can think of some wonderful recipes we’ve shared together in the past such as Marinated Flank Steak Nachos and Super Nachos for Supper, but let’s go with something simple. With premade salsa, Cheddar Cheese Soup and canned meats, these yummy Nachos are as easy to make as they are to eat. Yum!
Easy Chicken Nachos
1/2 cup Chunky Salsa
1 can Cheddar Cheese Soup
1 can Chicken White Meat
10 oz bag Tortilla Chips (see note)
1/4 cup Tomatoes, diced
1/4 cup Green Onions, sliced
1/4 cup Black Olives, sliced
Note: Feeling ambitions? Why not make your own Tortilla Chips. If not, be sure to warm your chips for a little extra touch of goodness.
Heat the salsa, Cheddar Soup in a saucepan over medium heat. Break up the chicken meat, add to the soup mixture. Bring to a bubbling boil.
While the cheese mixture heats, spread the tortilla chips on a large platter or individual plates. Set aside.
Dice tomatoes, set aside. Slice green onins, set aside.
When the cheese is ready, ladle over chips. Top with tomatoes, green onions and olives.
