We’ve already established that today is National White Chocolate Cheesecake Day. While some of are great bakers and can whip out a perfect White Chocolate Cheesecake with our eyes closed and one hand tied behind our backs, not all of us have those skills.
When I saw this picture of a New York Cheesecake with White Chocolate Berries, a light came on. Okay, so the cheesecake might not actually be a white chocolate cheesecake, the spirit of the day remains with almost no effort and absolutely no baking. Really, what could be easier?
White Chocolate Berry Cheesecake
1 New York Style Cheesecake
1 Basket Strawberries
1 Pint Raspberries
1 Pint Blackberries
1 cup White Chocolate Chips
2 teaspoons Shortening
If the cheesecake is frozen, thaw according to package directions. Place on a serving plate. (I like mine on a footed cake plate for even more “wow”).
Rinse berries, pat dry and let set to completely air dry.
In a microwave save bowl, melt white chocolate chips with shortening in 30-second intervals, stirring between each, until smooth.
Carefully dip berries into the white chocolate and arrange on top of the cheesecake in a decorative fashion. Place any unused white chocolate berries on a parchment lined baking sheet. Place in the refrigerator for about 2 hours for the white chocolate berries to set.
When serving, include a few extra berries on the plate alongside the cheesecake.
