Did you know that today is National Find a Rainbow Day and National Walking Day? Wouldn’t it be lovely to take a stroll after those April Showers and be greeted by a beautiful rainbow? But then again, there’s no promise of finding a rainbow in the sky as you stroll along after the rain. So how about this idea instead – take a walk, then come home to a beautiful Rainbow Fruit Platter. Depending upon when you take your stroll, this could be an afternoon delight or the evening’s dessert.
While I’ve given you a recipe for finding a rainbow, you can mix it up or use whatever fruits strike your fancy. Use Kiwis instead of green grapes or blueberries instead of red grapes. Cantaloupe or mangoes would also be delicious. Add some blackberries or raspberries. Whatever the market has available that is fresh and sweet and delicious. It’s your rainbow, so create whatever makes you feel happy. And if you are looking for that pot of gold at the end of the rainbow, might I suggest bananas?
Rainbow Fruit Platter
2 cups Strawberries
6 Cutie or Halo Mandarin
2 cups fresh Pineapple Chunks
1 1/2 cups Green Grapes
1 cup Red Grapes
1 teaspoon fresh lime juice
1 cup Cool Whip, thawed
1/2 cup Strawberry Cream Cheese Spread
Hull and cut strawberries in half. Set aside.
Peel Cuties, break into sections and set aside.
Drain pineapple chuks and set aside.
Remove green and red grapes from their stems. Set aside.
In a bowl, whisk cream cheese spread with lime juice until blended. Stir in the cool whip topping.
Arrange fruit in an arch shape on a large platter to form a rainbow.
Spread or pipe dip like clouds at the base of the rainbow.
This 🌈 platter is sooooo cute! I could see myself making this for a party or my health class students. They would love this!!!

What a great idea. I like the idea of getting kids involved, too. They can have “sweets” sweetened by nature.
