Easy Shrimp and Broccoli Stir-Fry

We haven’t had anything Stir-Fried in a while, have we? Stir-fry is always a hit in our house. While stir-fry isn’t complicated, it can involve a ton of prep work. What I’ve found that works best is to read through the recipe completely, gather the ingredients, measure everything out into little whiskey-shot size bowls and line it all up. That was when it comes time to stir-fry, everything is ready and at my finger tips.

I don’t know how you observe Lent in your home, or if you even do. In our house, we try (and I stress try) to avoid meats except Sundays as a rule. Fridays it’s a no-brainier – we are Catholics after all. Now that we have entered Holy Week, we strive to keep everything simple and humble.  Shrimp and fish are humble. Lobster not so much.  So here’s to another Shrimp Supper. Hope you enjoy.

Easy Shrimp and Broccoli Stir-Fry
For the Sauce
2 Garlic Cloves
3 tablespoons Soy Sauce
2 tablespoons Oyster Sauce
1 tablespoon Rice Wine Vinegar
1 tablespoon Brown Sugar, packed
1 tablespoon freshly grated Ginger
1 teaspoon sesame oil
1 teaspoon Cornstarch
1 teaspoon Sriracha

Peel and mince garlic. Set aside until ready to use.

In a small bowl, whisk together soy sauce, oyster sauce, rice wine vinegar, and brown sugar, packed. Freshly grate ginger into the bowl along with sesame oil, cornstarch and Sriracha, if using. Add the minced garlic, stir to blend and set aside.

For the Stir-Fry
1 1/2 lbs medium Shrimp, raw
1 tablespoon Olive Oil
24 ounces Broccoli Florets
1 teaspoon Sesame Seeds
1 Green Onion, thinly sliced

Peel and devein shrimp. Leave tails on if desired. Rinse under cold water and set aside.

Heat olive oil in a large skillet over medium high heat. Add shrimp, and cook, stirring occasionally, until pink, about 2-3 minutes. Add broccoli, and cook, stirring frequently, until tender, about 2-3 minutes.

Stir in soy sauce mixture until well combined and slightly thickened, about 1-2 minutes.

For the Garnished Finish
3 Green Onions, sliced on the bias
1 tablespoon Black or Toasted Sesame Seeds
Red Pepper Flakes, optional

Transfer stir fry to a serving platter. Garnish with sesame seeds and green onions. For added heat, sprinkle with a pinch of red pepper flakes.

Serve immediately. This goes well on a bed of steamed rice or with Stir-Fry Spaghetti, if you have a second wok.
