When I first saw this recipe for a slow-cooker Roast Beef Sandwich that was supposed to be “just like Arby’s” I was very skeptical. After all, the real key to Arby’s is that the meat is cut super thin. Unless you have an awesome meat slicing machine in your kitchen, chances are you aren’t going to get the millimeter thin ribbons of beef. That much I was certain, and in the end that much was true. We didn’t have Arby’s style roast beef sandwiches for dinner, but we did have an awesome chopped beef sandwich that rocked our worlds. While this isn’t exactly one of those throw it in the crock pot and forget about it suppers, a little tending isn’t much for a hot sandwich that is this delicious. You know me, once I realized we weren’t going to get that same thin sliced Arby’s sandwich from my slow cooker, I tweaked the final sauce just a bit and bam – it was awesome!
Who knows, maybe one of these years I might just break down as spring for a top quality commercial meat slicer. But then again, why put out that kind of capital when I can still serve up a hot roast beef sandwich that is this delicious?
Slow Cooker Roast Beef Sandwiches
For the Roast Beef
2 lbs Eye Of The Round Roast
1/4 cups Beef Stock
1/4 cups Firmly Packed Brown Sugar
1 envelope Onion Soup Mix
1/2 teaspoon Garlic Powder
Sea Salt to taste
Black Pepper to taste
Sesame Seed Hamburger Buns
To Make the Roast for Sandwiches
Place roast in the bottom of a slow cooker.
In a bowl, mix together water, brown sugar, soup mix and garlic powder. Season with salt and pepper to taste.
Pour mixture over roast, cover and cook on LOW for 8 hours.
Note: If your roast is coming straight from the freezer, start out on HIGH for 2 hours, then turn the cooker to LOW for the remaining 6 hours.
For the Finishing Sauce – Step One
1/2 cup Ketchup
1 pinch Salt
1 pinch Black Pepper
1 pinch Garlic Powder
1 pinch Onion Powder
1 dash Tabasco Sauce
To Finish – Step One
After 4 hours of cooking, add the first finishing sauce to the pot. In a measuring cup, mix ketchup with salt, pepper, garlic powder, onion powder and Tabasco Sauce to taste. Whisk to blend. Pour sauce over the roast, cover and continue to cook for 4 hours.
For the Finishing Sauce – Step Two
1/4 Cup Favorite Barbecue Sauce
Pepper to taste
To Finish – Step Two
Remove roast from pot. Let cool enough to handle, then slice as thinly as possible. Return meat to the slow cooker. Add 1/4 cup or more of barbecue sauce. Stir to blend and let beef simmer until ready to serve.
For Serving
1/2 bag Curly Fries
Seasoning Salt to taste
To Serve
When ready to make fries, heat oven to 425 degrees. Spray a rimmed baking sheet with cooking spray. Spread fries out in a single layer, spray with cooking spray and season with seasoning salt.
Bake in hot oven according to package directions, about 20 minutes.
To serve, brush buns with a little butter and toast on a griddle pan over medium heat until golden. Pile on the meat and enjoy!
