One of the things I remember growing up was that excited anticipation for our turn at the charcoal grill. Dad would barbecue up something special, like his Marinated Beef Kabobs or fresh ground burgers. When he was all finished, those glowing red coals were ours. And nothing is better to a child then making your own gooey, dripping with molten goodness S’More. From a child’s perspective, the whole point of stoking the Weber or building a campfire in the evening is for roasting marshmallows. When I got older, I appreciated a campfire for it’s evening warmth and piping hot morning coffee. But as a child, it was all about toasting marshmallows.
Now that I’m a grownup, it’s still about the marshmallow, but my tastes and my S’Mores have – matured. These fruity treats are among my favorite campfire treats.
Strawberry Banana Split S’mores
4 Graham Crackers
2 Strawberries, sliced thin
½ Banana, sliced thin
1 Chocolate Bar
4 Large Marshmallows
Break four Graham Crackers in half to create 8 squares. Set aside.
Rinse strawberries, removing their green tops. Slice strawberries as thinly as possible. Lay on a paper towel until ready to use.
Peel banana. Cut half the banana into thin rounds. While you are cutting, you can go ahead and eat the other half of the banana. Place slices of banana on four of the graham cracker squares.
Break the chocolate bar and place sever pieces of chocolate on each banana covered graham cracker square.
Place marshmallows on skewers and char the marshmallows over an open flame, then immediately place melting marshmallow on top of the chocolate pieces. Top marshmallow with two slices of strawberries each, and another square of graham crackers. Compress lightly until the chocolate begins to melt and the marshmallow is oozing out. Enjoy your s’mores while its still hot.
