Good Morning Country Apple Sausage Patties

Labor day is nearly upon us. For some people, it means a three-day weekend. For us, it’s a real two-day weekend since my guys work Saturday. But that means two days of sleeping in and sitting down to a real breakfast together.

I know I don’t share enough breakfast goodies with you. Breakfast is my absolute favorite flavor palette. I adore breakfast. When I retired, I had hoped we would be having breakfast every day. It was one thing when we all worked – no one wants to come home to a pile of dishes in the sink and we didn’t always have time to clean the kitchen before heading out the door. Back then, it was a 45-minute commute to and from work, if traffic was good, if there were no accidents, if it wasn’t raining and so on. One good pile up, or wet roads and that commute could be as much as two hours. Now my guys have a 10-minute commute and I’m here to clean up the breakfast dish. Yet we still don’t do breakfast during the week. Why? My guys would rather sleep in. And I can’t fault them for that – their days are long. We do manage to have breakfast here and there during the week. Weekend, especially long weekend, those are reserved for a real breakfast. And Holidays deserve something extra special like home made Apple Sausage!

Country Apple Sausage Patties
1 small Granny Smith Apple
1 1/2 lbs Ground Pork
1 tablespoon Pure Mable Syrup (see note)
1 teaspoon dried Sage
1 teaspoon White Pepper
1 teaspoon Garlic Powder
3/4 teaspoon Kosher Salt
1/4 teaspoon Red Pepper Flakes
2 tablespoons Vegetable Oil

Note: This recipe has the best flavor when 100% Pure Mable Syrup is used and not Pancake Syrup. However; in a pinch any syrup will do.

Peel, core and grate the apple into a bowl. Add ground pork, maple syrup, sage, pepper, garlic powder, salt and crushed red pepper flakes. Gently combine until fully incorporated without over working the meat.

Divide the sausage mixture into 12 equal portions, then roll each into a ball. Flatten into patties about 1/2-inch thick.

Heat a cast iron skillet over medium heat for about 5 minutes. Add 1 tablespoon of oil and let heat until shimmering. Cook 6 of the sausage patties about 5 minutes per side, until nicely browned and cooked through. Remove sausage from skillet, place on a paper-towel lined plate and hold in a warm oven.

Repeat with remaining tablespoon of oil and sausage patties.
