Sometimes the most simple meals are the best. After all, simple does not mean one-dimensional. What makes food worth eating are layers and textures and aromas. How do we eat? With our senses fully engaged – with our eyes and our noses long before that first bite.
This simple dish starts with the onion wedges and garlic cloves. By layering the bottom of a casserole dish with such aromatic ingredients, we’ve already begun the process of creating a dish that will appeal to the senses. The fact that the chicken rests on the onion-garlic mixture means those wonderful aromatic flavors will penetrate deep into the meat while the dish roasts in the oven. The pan drippings are awesome drizzled over the chicken and even better as a dip for warm bread.
Yeah, this delicious Chicken Supper has it all – simplicity that is complex.
Simple Onion-Garlic Drumsticks
1 tablespoon Olive Oil
1 Onion, cut into wedges
12 Garlic Cloves, cut in half
Garlic Powder to taste
Pepper to taste
Salt to taste
1 Tablespoon Parsley Flakes
1 Baguette, sliced
Heat oven to 375 degrees.
Pour about 1/2 a tablespoon of olive oil into the bottom of a large casserole dish.
Peel and cut an onion into thin wedges. Scatter onion in the bottom of the pan. Roll in oil to coat.
Peel garlic cloves. Cut each clove in half. Scatter cloves in with the onions.
Rub remaining 1/2 tablespoon of oil over the drumsticks. Arrange drumsticks in the baking dish on top of the onions. Space apart so that drumsticks are not touching.
Sprinkle drumsticks with garlic powder, black pepper and salt. (Go easy on the garlic powder and salt, be liberal with the black pepper).
Bake drumsticks in the heated oven for about 30 minutes.
Remove from oven, turn drumsticks over. Season a second time with garlic powder, pepper and the salt as before. Return drumstick to oven, and bake another 30 minutes or until cooked through and golden.
Remove from oven, sprinkle with parsley for color. Stack drumsticks on a rimmed dish or serving platter.
Pour onion-garlic mixture with pan drippings in a separate rimmed dish or serving bowl to serve along side the drumstick. Slice the baguette and serve in a bread dish. If desired, dip the baguettes into the pan drippings, top with a little onion and soft roasted garlic and enjoy between bites of chicken.
