Imagine my guys surprise when I served up oven barbecued pork chops, corn bread with honey butter and some Ranch Beans. They could not believe their eyes – as Kiddo put it – normal food.
Not everything has to be crazy or fancy or as Hubby calls it “froufrou food”. I know how to prepare delicious, down home good meals. Since we were spending the afternoon making Christmas decorations, having a good homespun meal seem perfect.
The Snowmen for the cupboard doors didn’t turn out half-bad either, considering there was no patter to follow. The carrot noses were traced from a small pepper picked in our garden. The circles for the snowman are different size plates. The coals were traced from the top of a small salt shaker. And the hat is from a picture I found online, printed out and used as a base for making my own template. Some ribbon and a little glue is all it took to complete.
Skillet Oven-Barbecued Pork Chops
1 tablespoon Olive Oil
4 bone-in Pork Loin Chops (3/4 inch thick)
Kosher Salt to taste
Black Pepper to taste
1 tablespoon Worcestershire Sauce
2 tablespoons Cider Vinegar
2 teaspoons Brown Sugar
1/2 teaspoon Black Pepper
1/2 teaspoon Chili Powder
1/2 teaspoon Smoked Paprika
3/4 cup Ketchup
1/4 cup Chili Sauce
1/4 cup hot Water
Heat oven to 375 degrees. Lightly rub olive oil into a large cast-iron skillet. Place chops, overlapping slightly if necessary, into the prepared skillet. Season with just a pinch of salt and pepper if desired. Set aside.

In a large bowl, combine Worcestershire Sauce, vinegar, brown sugar, pepper, chili powder, paprika, ketchup, Chili Sauce and water. Whisk to blend, then pour over pork chops.

Bake, uncovered in the heated over for 40 minutes or until cooked through, turning chops halfway through estimated cooking time.
Remove from oven, turn several times to coat well in the barbecue pan sauce. Drizzle more sauce over the chops once plated.

Serve with your favorites such as Ranch Beans and Sweet Honey Cornbread.
