So that invite to a New Year’s Eve Bash turns out to be “pot luck” or there’s just one more something-something you want to put out for your own cocktail spread. Don’t worry, these delicious Crab Points will win rave review with almost no effort.
My biggest fear in life is not having enough for guests to nibble on or showing up without a large enough contribution. Last year we attended a holiday a pot luck, and the entire back of our car was full of food.
Hubby reminds me all the time that other people are bringing food, too. He stresses “a dish to share” not a carload to share. What can I say except I am truly my mother’s daughter. My mother believed that not only did everyone get their fill, but that no guest every left our home without a doggie-bag of goodies.
So if you are like me and you want to go all out, without really making yourself too crazy, this is a great recipe to have on hand.

Mini Crab Points
4 slices Whole Wheat, Berry wheat or Brown Bread
1 small Garlic Clove
1/4 cup Celery
2 tablespoons Red Bell Pepper
1 can (6 oz) Crabmeat
2 medium Green Onions
1/4 cup Mayonnaise
1/4 teaspoon Old Bay Seasoning
Parsley for garnish
Lemon Wedges for garnish, if desired
Toast bread, set aside.
Finely mince garlic, celery and bell pepper. Said aside. Drain crabmeat, flake apart and set aside. Trim roots from green onion, slice onions and set aside.
In medium bowl, mix mayonnaise and garlic. Stir in crab-meat, celery, bell pepper, onions and seafood seasoning.
Top toasted bread with crab mixture. Cut diagonally into quarters. Chop some parsley, garnish points.
Arrange points on serving platter and serve with lemon wedges if desired.

Well, I’m definitely inviting you to my next New Year’s party…We usually eat crab cakes on New Year’s Brunch, and this year I’m thinking about making a swap with mushrooms. I’ll post it if it comes out….

What a great idea! Don’t you love putting things is shells? I have a stash of scallop and oyster shells that I don’t use very often, but when I do it is always such a lovely thing to behold.
