Irish Hot Chocolate with Whipped Cream

Add a little whipped cream to just about anything and suddenly you’ve gone from ho-hum to pizzaz. Add some brandy to whip cream topped hot chocolate, and we are celebrating National Whipped Cream Day the Irish way.

One of my favorite whipped cream dishes is simply some berries topped with whipped cream. It’s light at the end of a big meal, it’s refreshing in the summer and a nice surprise at a brunch. However; this is January. It’s cold outside. And in my part of the world, fresh fruit isn’t summertime ripened fruit. No, fruit would not do.

As long as it’s cold, why not have some hot chocolate topped with whipped cream? And as long as we are looking to warm ourselves all the way to our toes, why not add some brandy to the cocoa? After the holidays with Spiked Eggnog, there’s bound to be a little brandy somewhere.

Irish Hot Chocolate with Whipped Cream
Whipped Cream
1 cup Heavy Cream
2 tablespoons Sugar

To Make the Whipped Cream: Place the bowl and whip attachment for your stand-up mixer into the freezer to chill well, at least 30 minutes.

Pour well-chilled heavy cream into the chilled bowl. Add sugar, whip until stiff peaks form.

Cover the whipped cream and chill until ready to serve.

Hot Chocolate
2 cups Whole Milk, divided
2 oz Semi-sweet Chocolate
6 tablespoon Cocoa Powder
4 tablespoon Sugar
3/4 cup Heavy Cream
Whipped Cream for top
Chopped Chocolate for garnish

To Make the Hot Chocolate: Over low heat, warm 1/2 cup of milk. While the milk warms, chop the chocolate into small pieces and set aside. In a small bowl, mix the cocoa powder with the sugar. Set aside.

Once the milk begins to bubble around the edge of the pan, add the chopped chocolate. Melt the chocolate with the milk, stirring often. Once the chocolate is melted, add the remaining 1 1/2 cups of milk, the heavy cream and the cocoa powder-sugar mixture. Stir until smooth and heated through. Let the chocolate milk mixture continue to heat over medium heat until it begins to boil. Remove from heat.

To Serve: Pour a shot or two of brandy into each mug. Pour in the hot chocolate and add a generous helping of whipped cream.

Top with some chopped or shaved chocolate. Sit back, relax and enjoy.
