Bright, colorful and super easy to make – what could be better? Family meals need not be stressful – we have enough stress in our lives, thank you. A little chopping, a can of tomatoes, and there you go.
I don’t know about you, but there are things I keep in the pantry as a staple. Dried Pastas of every kind. Cans of tomatoes, some plain, some Mexican, some Italian. Dried herbs for when fresh isn’t practical. Add a few fresh ingredients, and before you know it, dinner in a snap. Add some warm bread, and sit down together – take five to catch up.

Sausage Broccoli Spiral
2 cups Rotini Pasta, uncooked
1 lb Italian Chicken Sausage Links
1 medium bunch Broccoli
1/2 Red Onion
1 (14.5 oz) can Diced Italian Tomatoes
1 teaspoon dried Basil
1 teaspoon dried Parsley Flakes
Cook pasta according to package directions. Meanwhile, slice sausage on the bias 1/4-inch thick, set aside. Cut broccoli into florets, set aside. Peel and slice the onion into half-moon slivers, set aside.
In a large skillet over medium heat, cook the sausage, broccoli and onion 6 to 8 minutes or until broccoli is crisp-tender.
Add tomatoes, basil and parsley. Bring to a boil. Reduce heat; simmer, covered, 8-10 minutes or until broccoli is tender. Drain pasta; add to skillet and heat through.
