Today is National Potato Chip Day. I suppose we could have made a dish featuring crushed potato chips. That would have been fine. I’m just not a big fan of potato chips. I will admit, I like to smash plain chips on a sandwich, but that’s about as far as it goes.
Right now, with everything going on in the world, Kiddo and I are just hanging out around the house. As many of you know, both Hubby and Kiddo work in the event industry. Things tend to slow down right after the holidays, there’s a lull until spring, when things start happening again. This year it’s a little different, as you can imagine. Events are on hold. Gathers are on hold. Life is on hold. I cannot think of a single industry that hasn’t been impacted by this World Health Emergency in one way or another. As scary as it seems, I know in my heart that we will come out the other side better, stronger, more determined and more united. That’s just my opinion, for what it’s worth.
Normally, I have the house to myself so lunch for me is a small salad or some yogurt. Now that Kiddo is home, I feel compelled to make something for the both of us. Grilled sandwiches have become the new norm. And what goes better with a sandwich than some chips? So here’s to National Potato Chip Day!
Grilled Turkey-Pepper Jack Sandwiches
8 sliced Sourdough Bread
Mayonnaise as needed
4 sliced Smoked Turkey Bologna
4 sliced Pepper Jack Cheese
Butter as needed
Chips for serving
On a flat work surface, lay out sourdough bread. Spread mayonnaise on each slice. On four slices of bread, place Pepper Jack Cheese. On the remaining slices, place Turkey Bologna. Put the halves together, creating four sandwiches.
Brush the tops of the bread with soft butter.
Heat a griddle over medium heat. Once warmed, place the sandwiches, butter side down, on the griddle. Grill until nicely browned, about 3 minutes. While the sandwiches are grilling, brush butter on the tops of the bread. Flip, freshly buttered side down, and continue to grill until the cheese is nice and melted.

Remove from griddle, cut in half and serve with your favorite chips.
The only industry not experiencing a slow down is probably the infection control one.

This is probably my favorite food day. I love potato chips. I love them so much, don’t buy them because I would eat them. They are a perfectly balanced food of salt, fat, and carbs. And no, I cannot eat just one, which is why I don’t buy them…well, maybe a little bag.

I never thought of potato chips that way – and now you have an excuse to eat them all day!!

I like french fries a lot better, but potato chips aren’t bad. 🙂
