Sometimes, I cook just for me. When I do, I try my best to avoid making a huge mess in the kitchen. Sometimes that works out, other times it doesn’t.
I’ve gotten my breakfast burritos down to a fine art – tortillas, sausage, and a scrambled egg all cooked up in a single skillet. I know it sounds crazy, but I’ve been missing a fast food breakfast burrito. This whole stay safe by staying home works a lot like a visit to the dentist office. The moment they say “whatever you do, don’t swallow” suddenly you feel as though you might drown if you can’t swallow.
It’s the same thing with fast food breakfast burritos. I could care less if I have one until now, when I can’t get one. Suddenly I’m climbing the walls wanting a quick burrito fix. How ’bout you – what’s making you crazy?
Sausage Breakfast Burrito
2 6-inch Flour Tortillas
Cooking Spray as needed
3 Breakfast Sausage Links
2 tablespoons Red Onion, diced
2 tablespoons Jalapeno Pepper, diced
1 Egg
Kosher Salt to taste
Black Pepper to taste
1/2 cup Mexican Cheese, shredded
Select a skillet large enough to warm the tortillas. Make sure the skillet has a tight-fitting lid.
Spray tortillas lightly with a little cooking spray. Warm in the skillet uncovered just until pliable. Remove from skillet, keep warm until ready to fill.
Place sausage links in the now empty skillet. Add about 1/4 cup of water to the skillet. Cover and cook sausage over medium heat until water has evaporated. Uncover; let links brown, turning as needed.

While the sausage cooks, dice the jalapeno pepper and red onion, Set aside. Once the sausage has browned, chop into small bite-size pieces and set aside.

Into the now empty skillet over medium low heat, break the egg. Season with salt and pepper. Let egg cook undisturbed just until whites begin to set. Scramble egg with a fork. Add sausage, peppers and onions. Mix into the eggs.
Remove from heat, add cheese and cover just until cheese has melted. Fill the warm tortillas with the egg mixture, roll into a burrito and enjoy.
I enjoyed seeing your thoughts on staying at home. I believe we are all craving things that we have take for granted, until recently. My cravings change from hour to hour. I’m glad I have a full pantry and freezer.
