Pack Lite and Walk in The Park

Today is National Walk in the Park Day. This day was created to encourage us all to get out, stretch our legs and breath in the fresh air. The day has a whole new meaning in light of current world events. Sadly, not everyone can take advantage of a day outdoors.

Where I am, taking walks is permitted, even encouraged, so long as you remember to practice social distancing. Social Distancing – what a strange new term. To be social from afar. Today’s walk in the park involves more than just Social Distancing for those who can get outside. We need to be ever mindful of our surroundings. Don’t take a rest of a park bench. Don’t have lunch at a park picnic table. Wipe down everything you touch before you touch it. It’s a bombardment of cautions every time you step outside your door.

After spending all this time penned up inside, a walk in the park is a therapeutic way to relax and walk off the stress of life. It’s an opportunity to capture the beauty of spring in photographs, to have an uninterrupted conversation with ourselves, to forget about time and appreciate the quiet beauty of the world.

For those unable to venture outdoors, a walk in the park is still possible. There are amazing virtual walking tours. Visit someplace new. Just think, you can go anywhere. Throw open your windows, let the fresh air in and let your imagination soar to new heights.

Don’t forget to pack a light lunch for your adventure.

Roast Chicken Wraps with Aioli Mayo
1/3 cup Mayonnaise
1 Garlic Cloves, minced
1 tablespoon Lemon Juice

4 (10-inch) Flour Tortillas
8 Green Leaf Lettuce Leaves
1 (9-oz) package Thin-sliced Oven-roasted Chicken
2 Roma Tomatoes, chopped
1/4 cup Real Bacon Bits

Place mayonnaise in a small bowl. Peel and finely mince the garlic, add to the mayonnaise. Whisk in the lemon juice. Continue to whisk until well blended.

Spread on each tortilla with the Aioli Mayo, leaving 2-inch border at bottom of each.

Arrange 2 lettuce leaves on each tortilla, leaving 2-inch border at bottom. Evenly top each with chicken. Dice the tomato, sprinkle over the chicken. Scatter bacon bits on top.

Fold bottom edge of each tortilla up, tuck in the sides and roll tightly. Secure, if desired, with toothpick, foil or waxed paper. Cut each wrap in half on the bias.

  1. Spring is here! I think our daily walk with the dog is keeping us sane! We had weather yesterday (poured all day, then thunder storm, a deluge of hail!), so we did not get our walk, The dog has been pouting ever since. Enjoy the fresh air!
