Wake up – rise and shine! It’s a beautiful Saturday morning. Soon the golden rays of sunlight will break the darkness of predawn. The world will stretch and stumble from their beds. Birds will be singing. Isn’t this a great day to be alive?
What better way is there to celebrate the birth of a new day than having something sinfully delicious for breakfast? Granted, you won’t be serving these waffles with a side of bacon and some scrambled eggs, but a nice Cappuccino wouldn’t be out of the question. Enjoy!
And don’t forget; tomorrow is Mother’s Day. Chocolate Cake Waffles would be a great start to Mom’s Special Day.
Chocolate Cake Waffles with Whipped Cream
Whipped Cream
2 cups Heavy Cream
1/4 cup Powdered Sugar
Chill a mixing bowl and whisk beaters in the freezer for 30 minutes.
Pour well-chilled cream into the chilled bowl. Beat on low until bubbles begin to form. Add powdered sugar, beat on high until firm peaks form.
Cover whipped cream and refrigerate until ready to use.
Chocolate Cake Waffles
1 box Chocolate Cake Mix
1-1/3 cups Water
1/3 cup Vegetable Oil
3 large Eggs
Heat waffle iron. If using a non-stick waffle iron, brush with vegetable oil or spray with cooking spray to prevent sticking.
While the waffle iron heats, beat cake mix, water, oil and eggs on low for about 30 seconds using a hand-held mixer or standing mixer. Once batter is moist, increase speed to medium-high and mix for two minutes.
Using waffle maker’s recommend amount, pour batter into the center of the heated waffle iron. Close and bake for 3 to 5 minutes or until steam is no longer escaping from the iron. Carefully remove the cake waffle. Repeat until all the batter has been made.
Finishing Touches
1/2 cup Mimi Chocolate Chips
Maraschino Cherries as desired
Chocolate Syrup as desired
To serve cake waffles, plate desired number of waffle squares. Sprinkle with chocolate chips. Garnish with chilled whipped cream, a cherry and chocolate syrup drizzles as desired.
