Brieze Into Sunday

Yeah, it’s Sunday. Normally I share a nice Sunday dinner with you. And I gotta say, that was the plan. But as I “thumbed” through my recipe ideas for Sunday, I saw this beautiful Omelette from Closet Cooking.

First off, it’s got bacon. Lots of bacon. Four slices of bacon with every omelette. I think in a diner they charge extra for that much bacon. Plus; the omelette is cooked in bacon drippings. As a southern girl at heart; gotta love eggs cooked in bacon fat even if those eggs are “fancy”. And then there’s the selection of cheese – not just any cheese but Brie Cheese. Oh my! The grape tomatoes and sprinkling of arugula are like frosting on a cake if you ask me.

So yeah, it’s Sunday. Let’s talk Brunch! I’ve gone ahead and given you the ingredients to create four beautiful omelette. If you wanted; you could make just one. Or a dozen. Can you say seconds anyone?

Smokey Brie Omelette
16 slices Smokey Bacon
8 large Eggs
4 tablespoons Heavy Cream
Kosher Salt to taste
Black Pepper to taste
8 oz Brie Cheese
1 pint Grape Tomatoes
Handful Arugula

In a skillet over medium heat; cook bacon until crisp. Place on paper towels to drain. Keep divide bacon, 4 strips per omelette; 2 whole and 2 crumbled. Set aside until ready to use.

Pour a little of the bacon grease into a small omelette pan, swirl to coat. Place the pan over low heat.

In a bowl; whisk 2 eggs with 1 tablespoon of cream. Season with salt and pepper to taste. Pour the egg mixture into the pan; coat the bottom and let it cook until the egg begins to set.

Meanwhile; thinly slice the Brie Cheese; 2 ounces per omelette.

Once the egg mixture has set, sprinkle 2 crumbled slices of bacon over one half of the omelette. Top bacon with the Brie Cheese. Fold other half of omelette over the filling; let cook until the cheese has melted.

Slide out onto a plate. Top with whole bacon slices. Scatter tomatoes and arugula as desired and serve or keep warm in the oven until ready.

Note: If holding in the oven; add tomatoes and arugula just before serving.

Repeat to create three more omelettes.
