Another Taco Tuesday in Paradise

Over the course of our marriage, Hubby has introduced me to a lot of different things. One was an appreciation for Jimmy Buffet. One of the best concerts we’ve attended was a Jimmy Buffet show in Las Vegas.

There is nothing more stranger than about a thousand people clad in Hawaiian Shirts with straw hats and Parrot Heads wandering about. Pretty much the entire audience was either high or tipsy as they poured out from the venue and into the casino singing Cheeseburger in Paradise off key. What a hoot!

So what do tacos have to do with Cheeseburgers in Paradise? Nothing. But tacos do belong in Margaritaville. So that’s the connection. And a mighty tasty one at that.

Oven Baked Stand Up Beefy Tacos
10 (1 package) Stand Up Style Taco Shells
1/2 lb Ground Chorizo
1 lb Ground Beef
2 tablespoons Taco Seasoning Mix
1/3 cup Beef Stock
1 (16 oz) can Refried Beans
1-1/4 cups Mild Cheddar Cheese, shredded
2 cups shredded Lettuce
2 Plum Tomatoes
1/2 Red Onion
1 cup Salsa
1 cup Sour Cream

Heat oven to 400-degrees. Spray bottom of two 13-inch by 9-inch (3-quart) baking dishes with cooking spray. Place five taco shells standing up together in each dish; set aside.

In 10-inch nonstick skillet, cook beef and chorizo meats together over medium-high heat 5 to 7 minutes, stirring frequently, until meats are thoroughly cooked; drain. Stir in taco seasoning mix and beef stock, heat to boiling. Reduce heat; simmer uncovered 2 to 3 minutes, stirring frequently, until mixture has thickened. Remove from heat.

While the meat is cooking, warm the refried beans in a microwave-safe bowl. Warm beans are easier to spread. Set aside until ready to assemble.

To assemble, spread about 2 tablespoons refried beans in bottom of each shell. Top each with heaping 1/4 cup beef mixture and 2 tablespoons shredded cheese. Bake 5 to 7 minutes or until cheese is melted.

While the Stand Up Tacos bake, shred the lettuce, dice the tomatoes and 1/2 a red onion. Set aside until ready to serve. If desired, place salsa and sour cream with the rest of the garnishings to have at the ready.

Remove tacos from the oven, garnish as desired with toppings. Serve and enjoy.
