Tater Tot Breakfast Pizza

Hubby loves his tater tots. He likes them with just about anything, and will eat them just about any time of the day. Just the tots, with a sprinkling of salt. Pile them alongside a burger or grilled dog. Serve them in the morning instead of Breakfast Potatoes. He doesn’t care, so long as he has his tots.

Me, I’m more a casserole kind of tot eater. Don’t get me wrong, I like tots as a side or with breakfast, too. But I am a big fan of casseroles, and tots just naturally lend themselves to all sort of delicious dishes.

Tater Tot Breakfast Pizza
1/4 cup sliced Green Onions
2 cups frozen Mini Tater Tots or Crowns
1 lb Bacon
1 (13.8 oz) tube refrigerated Classic Pizza Crust
1-1/2 cups shredded Colby-Jack Cheese
5 Eggs
Hot Sauce, if desired

Heat oven to 400-degrees. While the oven heats, slice the green onions and set aside.

Spread Mini Tots on ungreased 15 by 10 by 1-inch pan and bake for 15 to 20 minutes or until crispy and golden brown. Transfer tots to plate; set aside. Allow pan to cool about 10 minutes, and wipe any crumbs from pan.

Note: Do not turn off oven.

While the tots bake, fry bacon crisp. Drain on paper towels. Crumble or coarsely chop the bacon and set aside.

Once the baked tots have been transferred to a plate, spray bottom of the now empty pan with cooking spray. Unroll pizza crust in pan; let stand 5 minutes. Press dough in bottom and firmly up sides of pan. Bake in the heated oven for 10 minutes. If necessary, press down on crust as it bakes should it puffs up during cooking. Remove crust from the oven and assemble the breakfast pizza.

Sprinkle bacon over baked crust. Top with 1 cup of the cheese and the green onions. Beat eggs in 4-cup glass measuring cup, and carefully pour eggs over cheese and green onions.

Top with potatoes and remaining 1/2 cup cheese. Bake 11 to 16 minutes or until edges are golden brown and egg is set. Drizzle with hot sauce if desired.
