Sometimes when you don’t feel much like cooking you’ll grab what appears to be the easiest recipe in your collection. Yet you can still get a nice surprise. Yes, this recipe is super easy. But it was also delicious.
Hubby asked what I was making. I said chili. He looked around the kitchen. Just one pot on the stove and a few empty cans of chili on the counter. That’s it? Yep. We both laughed. Canned chili is something to slap on top of hot dogs and not a meal in itself.
Kiddo wandered into the room. What’s for dinner? Chili. Sounds good. What else – muffins or cornbread? Nothing else. Just chili. He gave me a look as though I had lost my mind.
See what happens when you are constantly cooking “feasts” every night? It becomes the norm, something expected. Oh but this dish sure hit the spot for all of us. The crunch of the Fritos, the bite of a good raw onion, the heat from Jalapenos and a hot chili that came straight from a can. Everything came together like magic. In just under 15 minutes we were enjoying an incredibly easy supper. Surprise! Kiddo even went back for a second bowl.
Cheaters Frito Texas Chili
3 cans Hot Chili (Dennison’s)
8 oz Mild Cheddar Cheese
1/2 large White Onion
1 bag Original Fritos
3 Jalapeno Peppers
Empty chili into a saucepan. Heat until bubbling hot over medium heat. While the chili warms, grate cheese and set aside. Peel half an onion, dice into small pieces and set aside. Stem pepper, slice into rounds and set aside.

Place a handful of Fritos into individual bowls. Top with warmed chili, onions and cheese. Garnish with jalapeno peppers and more Fritos if desired. Enjoy.

We spoil ourselves too! When I was just starting out, I know supper was often popcorn or a bowl of cereal! Wait a minute, I still have popcorn for supper sometimes!
