Oh Yum Banana Cream Pie!

Growing up, banana cream pudding was such a welcome treat. Couple Pudding with Nilla Vanilla Wafers, and we are talking heaven! Who doesn’t remember that Jell-O favorite with the toasted marshmallows on top?

So naturally, when it came time to make a Banana Cream Pie for National Banana Cream Pie Day, I had to bring those childhood memories together again, with a little more sophistication for grownup tastes.

Nearly Instant Banana Cream Pie
Banana Cream Filling
2 (3.4 oz) packages Instant Banana Pudding
3-3/4 cup Whole Milk
3 Bananas

To make the pudding filling, empty the contents of the pudding packages into a mixing bowl. Add very cold milk, whisk by hand until blended. Suing an electric whisk, continue to whisk about 3 minutes longer, until pudding is soft-set.

Place in the refrigerator to chill well and allow to thicken, about 30 minutes or so. Meanwhile, make the crust and whipped cream finish.

Vanilla Wafer Crust
1-1/2 cups Vanilla Wafer Cookies, crushed
1/3 cup Butter, melted
2 tablespoons Sugar
Pinch Salt

Heat oven to 325-degrees.

In the bowl of a food processor fitted with a blade, process cookies until crushed into small pieces. Melt butter, mix with cookie crumbs. Add sugar and a pinch of salt, blend.

Press cookie crumb into the bottom and up the sides of a 9-inch deep pie dish. Place in the oven to bake just until bottom is het and edges begin to brown, about 10 minutes.

Remove crust from oven, let cool completely before filling.

Whipped Cream Finish
1-1/2 cup Heavy Cream
3 tablespoons Powdered Sugar

In a well-chilled mixing bowl with well-chilled electric whisk, whip cream with sugar until stiff peaks form.

To Assemble Pie: Slice bananas. Space evenly in the bottom of the pie dish. Line the edge of the pan with slices. Fill banana-lined crust with the pudding. Spread to completely cover the banana slices. Use a rubber spatula to spread evenly.

Top pudding with a mound of whipped cream, spread out toward the edge. Arrange a few wafer cookies on top in a decorative way as desired.

Cover and chill until ready to serve.
