The Annunciation and Waffles

Not that we’re all in a rush, but today is exactly nine months from Christmas, the birth of our Lord and Savior. Today is the day Gabriel appeared to a young Mary and proclaimed  “Greetings, favored one! The Lord is with you.” This is the Feast of the Annunciation.

In the sixth month the angel Gabriel was sent by God to a town in Galilee called Nazareth,  to a virgin engaged to a man whose name was Joseph, of the house of David. The virgin’s name was Mary. And he came to her and said, “Greetings, favored one! The Lord is with you.” But she was much perplexed by his words and pondered what sort of greeting this might be.  The angel said to her, “Do not be afraid, Mary, for you have found favor with God. And now, you will conceive in your womb and bear a son, and you will name him Jesus. He will be great, and will be called the Son of the Most High, and the Lord God will give to him the throne of his ancestor David. He will reign over the house of Jacob forever, and of his kingdom there will be no end.” – Luke 1:26-33

In the Georgian Calendar, the sixth month is June. A June Annunciation would put the birth of Christ in March. A March birth would be more in keeping with the censes that brought Mary and Joseph to Bethlehem and image of baby lambs as depicted at the Nativity. However; in the Jewish Calendar, the sixth month is the month of Adar. The month of Adar has between 29 and 30 days, depending on the year. The month of Adar also corresponds with the Gregorian months of February and March. Once again, this puts the birth to be November or December. It doesn’t matter when Christ was born. All that matters for the faithful is that He is the lamb of God, sacrificed for all mankind.

In Sweden, this is day called Vårfrudagen, Our Lady’s Day. It is also Vafferdag, (Waffle Day). As a result of the similarities between these words; the act of devotion to the Blessed Virgin that dates as far back as the 17th century is linked to eating waffles on this day. For Catholics and Lutherans alike, historically speaking The Day of the Annunciation is a day for eating waffles.

Fluffy Annunciation Waffles
3/4 cup Flour
1/4 cup Cornstarch
1/2 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 tablespoon Sugar
1/2 teaspoon Kosher Salt
1 cup Milk
1/3 cup Vegetable Oil
1 large Egg
1 teaspoon Vanilla Extract
1 large Egg White

Sift the flour, cornstarch, sugar, baking powder, baking soda and salt in a medium bowl. Whisk to blend and set aside

In another bowl, whisk the milk, vegetable oil, whole egg and vanilla together until blended. Set aside.

In a third bowl, whip egg white until firm peaks form. Gently fold the egg white until the milk mixture.

Pour the milk mixture into the flour mixture and fold until just mixed. Set batter aside for 15 minutes to activate the baking powder.

While the batter rests, prepare ingredients for serving.

For Serving
Syrup as desired
Butter as desired
Mixed Berries (Strawberries, Raspberries, Blueberries, Blackberries)
Mint Leaves for garnish
Powdered Sugar for dusting

Gently warm the syrup. Rinse berries, slice as needed and set aside. Pluck mint leaves for garnish, set aside. Soften or melt butter, depending upon desire. Set aside.

To make Waffles: Heat the oven to 200-degrees to hold cooked waffles. Place a wire rack over a rimmed baking sheet and hold in the oven. Heat the waffle iron.

Pour the batter onto the heated waffle iron and cook until the waffle is crisp and golden brown. Immediately transfer the cooked waffle to the prepared rack in the oven. If you do not have a wire rack, place waffle directly on oven rack to keep it warm and crisp.

Repeat with the remaining batter, holding the waffles in the oven without stacking.

To Serve Waffles: Place waffles on a plate. Dust with powdered sugar. Scatter fruit and mint leaves as desired. Serve with butter and syrup.
