Cheddar Fries for Every Occasion

It was hard to pick just one National Day today. Three of the four were food related. The first was easy to skip – Lima Bean Respect Day. When I was younger, I loved Lima Beans. Today not so much. And my guys would head for the hills if I put Lima Beans on the table. Great in vegetable soup, no so much as a veggie side dish.

That left us with a real struggle. Cheddar Fries or Pineapple Upside Down Cake. Lord knows, my guys love my Pineapple Upside Down Cake. I’ve even found a baking pan made just for Pineapple Upside Down Cake with indented rings for the pineapples and perfectly centered circles for the cherries. Looks great empty, but by the time you put the brown sugar topping into the pan, it’s a little hard to see. That’s okay, after years of using a skillet as a cake pan for year, so where to put the pineapple just comes naturally.

I almost made a pineapple upside down cake for Easter. There’s just something about a glazed ham and pineapple cake that seem to naturally go together. And when it comes to picnic desserts, we grew up on pineapple upside down cake. The sweet, no frosting cake is perfect to pack in a picnic basket. Yeah, I almost went in that direction.

Oh, but there were those fries. Cheddar Fries – great as an appetizer on Pub Night. Or a snack while watching TV. Or a side to your favorite Cheeseburger. I gotta tell you, when indoor dining ceased to exist in our neck of the woods, we discovered a windowless Pub that serves up some of the best food ever, and they made the decision to not shut down. It wasn’t exactly a secret. The parking lot was packed every night. Surely the powers that be didn’t think all those people showed up at the same time for take out. It was loud, and crowded and just fun. Cheddar Fries reminded me of our favorite neighborhood Pub. So fries it was.


Smoky Bacon Cheddar Fries
1 (32 oz) bag Crinkle Cut French Fries
Cooking Spray
Kosher Salt
4 strips Bacon
2 Green Onions
2 cups shredded Cheddar Cheese
Sour Cream as desired

Heat oven to 425 degrees.

Spread fries out in a single layer on a rimmed baking sheet. Spray lightly with cooking spray, sprinkle with salt.

Bake in the heated oven for about 20 minutes, until golden and cooked through.

While the fries are baking, cook the bacon until crisp. Place bacon on paper towels to drain, then crumble and set aside.

Clean onions, trim root ends. Slice and set aside.

Once the fries are cooked, place about half of the fries in an oven-safe dish. Sprinkle with half of the bacon, half of the green onions and a cup of shredded cheese. Top with remaining half of the fries, bacon, green onions and Cheddar Cheese.

Place under the broiler for a few minutes for the cheese to melt. Serve with sour cream and enjoy.
