Pepperoni Pizza Skillet Dip

Wild Card Wednesday. One of my favorite days of the week. On Wild Card Wednesdays I serve up whatever strikes my fancy. Could make Pancakes for supper, or Filet Mignon with Brandy Cream and Peppercorns. I’ve even been known to order a pizza.

Although ordering a pizza really isn’t my style. While the guys would love pizza more often, to me it’s either a National Pizza Day or I’ve just spend the day “spring cleaning”, so Hubby picking up a pizza on his way home is perfect. They are fed without me turning the kitchen upside down.

When I first came across this recipe for Pizza Dip, I thought it might make a fun dish to serve during Football Season. Then I thought why not make it for one of our family game night? Be then again, dipping into gooey cheese with one hand while playing cards with the other just didn’t make sense. So on one of those Wild Card Wednesdays I thought what the heck? I wasn’t sure if Hubby would like something so darn cheesy, but he did. And Kiddo, you don’t have to ask him twice if he’d like Pizza Rolls.

Pepperoni Pizza Skillet Dip
1 cup Ricotta Cheese
1 teaspoon Parsley Flakes
1/2 teaspoon Basil Leaves
1 Garlic Clove, minced
Pinch Salt
1 cup Mozzarella Cheese, shredded
2 tablespoons Parmesan Cheese, grated
4 oz Pepperoni
24 Pizza Roll Snacks
1/4 cup Pizza Sauce

Heat oven to 450 degrees.

In small bowl, mix ricotta cheese, parsley flakes, basil leaves, garlic and salt. Set aside. In another small bowl, mix mozzarella and Parmesan cheeses. Set aside.

Cut pepperoni in half or quarters, depending upon size, set aside.

In 9-inch ovenproof skillet, arrange pizza snacks along outside of skillet in 2 rows. Place ricotta cheese mixture in opening in middle of skillet. Top cheese mixture with pizza sauce and half of the pepperoni. Top with shredded cheese mixture and remaining pepperoni.

Bake 14 minutes. Serve immediately, dipping pizza snacks in warm pizza sauce center.
