Friday’s Seafood Medley Bake

As a working man, Kiddo looks forward to Fridays. It’s the end of the workweek. Two glorious days off. All he need do is get beyond our Friday Night Catholic Supper.

Now some Fridays he has no complaints. Cheese Pizza Night is alright in his book. He even likes Tuna Salad Night, so it’s not all things that swim he objects to. Kiddo is even a fan of Squid aka Calamari. But a Seafood Medley would be Catholic Friday overload. On nights such as this, he’ll make his own grilled cheese.

Hubby on the other hand is in dining heaven. Hubby has yet to meet a creature from the sea he doesn’t like. And this beautiful Medley has it all – shrimp, fish and scallops. Oh yeah, welcome to Friday!

Seafood Medley Bake
2 Garlic Cloves
4 tablespoons Butter, divided
8 Jumbo Shrimp
4 (2 oz) Cod Fillets
20 Bay Scallops
1/3 cup White Wine
1 tablespoon Lemon Juice
Old Bay Seafood Seasoning to taste
Salt to taste
Black Pepper to taste

Heat oven to 450 degrees. Mince garlic, set aside. Melt 2 tablespoons of butter, set aside. Peel and devein shrimp, leaving tails attached.

Arrange cod, scallops and shrimp in an oven-safe glass baking dish. Drizzle with wine, butter and lemon juice. Sprinkle with Old Bay Seasoning and minced garlic. Season to taste with salt and pepper.

Bake in heated oven about 12 minutes. Remove from oven, Remove cod, set aside. Turn shrimp and scallops. Add remaining 2 tablespoons butter to the dish in the empty spot where the cod had been. Place a wire rack over the empty spot. Place cod on the rack, continue to bake another 5 minutes, until cod is flaky.

Remove from oven, remove cod from the rack and place into the sauce. Tip casserole dish, spoon sauce over everything. Serve directly from the baking dish.

Great with Garlic Linguine and steamed green beans for a simple yet satisfying supper.
