Good Morning PB and J!

Did you know that April is Child Abuse Awareness Month? The first Saturday in April is Love Our Children Day with an emphases on encouraging loving, respectful, healthy relationships with our children. Child Abuse is a cycle, one that’s not always obvious.

Some may argue that during the pandemic there was an epidemic of child abuse as well. Not only the child that is emotionally or physically abused at the hands of those entrusted to love and protect them, but the psychological scars of isolation. We may never know how many children fell through the cracks during the lock downs, invisible and unnoticed. It breaks my heart to think of those lost little souls. I will never be convinced that the benefits of remote learning outweighed the consequences. How many children lived in fear, with no way to escape? How many went hungry? How many suffered emotionally? All we can do is spread the word, reach out where we can, and remember to hug our children.

Today is also National Peanut Butter and Jelly Day. Seems fitting that we are reminded to love our children and celebrate the day with a childhood favorite – PB and J. Yeah, and it’s Saturday. What better way is there to start the day then in the kitchen creating memories? Enjoy this day and every day.

PB and J French Toast Rollups
6 tablespoons Peanut Butter, divided
2 tablespoons Grape Jelly
2 tablespoons Strawberry Jelly
12 slices Sandwich Bread
6 eggs
2/3 cup Milk
1 teaspoon Vanilla
2 tablespoons Butter
1/4 cup Sugar
1 teaspoon Cinnamon
Fresh Fruit, optional

In a small bowl, stir 3 tablespoons peanut butter with the grape jelly until smooth and well combined. Set aside. In another small bowl, mix remaining 3 tablespoons of peanut butter with strawberry jelly. Set aside.

Using a serrated bread knife remove the crusts from the bread. Gently roll each slice of bread with a rolling pin until it’s nice and thin.

Spread half of the flattened bread with grape jelly mixture, remaining half with strawberry mixture. Roll each bread into a jelly-roll cylinder. Set aside.

In a medium bowl, whisk eggs, milk and vanilla.

Heat butter in a nonstick skillet over medium heat. Dip each jelly-filled bread roll in the egg mixture and then fry it, turning often, until it is golden on all sides.

Sprinkle each roll with cinnamon sugar and serve with maple syrup. Garnish plates with fresh fruit.
