Yum – Meatball Pizza

Welcome to Thursdays in our house. Every day of the week has been assigned a “theme” to help me come up with a meal plan. While breakfast is a free-for-all, dinners tend to conform to certain “rules.”

As the sole meal planner, having a set of rules sure does help. If we only eat breakfast on the weekend, and have dinner at home throughout the year, that’s 9 meals a week, 468 meals a year. If I didn’t have guidelines to follow, I’d go nuts.

First there is the theme concept. Mellow Mondays, Wild Card Wednesday and Fabulous Fridays – you get the idea. Now themes aren’t carved in stone, and can be pushed aside for special events such as a particular National Food Day or a Catholic Feast Day or all those Holidays. When nothing else takes precedence, then Thursdays are known as Tuscan Thursday. That means anything Italian goes. Meatballs are Italian, right? And pizza, that’s Italian. So what better way to enjoy Tuscan Thursday than with a Meatball Pizza.

Like I said, welcome to my Thursday.

Meatball Pizza
12 Italian Meatballs
1 lb Pizza Dough
1/2 Red Onion
1 (8 oz) jar Pizza Sauce
Garlic Powder to taste
Italian Seasoning to taste
Mozzarella Cheese, shredded
Parmesan Cheese, grated

Thaw meatballs. Once thawed, cut in half and set aside.

Heat oven to 350 degrees. Place pizza crust on a pizza pan or baking sheet. Bake crust in the oven just until beginning to brown, about 10 minutes.

Slice onion in half from root to tip. Reserve half for another use. Peel remaining half, cut into thin slivers, set aside.

Remove crust from the oven. Spread sauce over the crust, sprinkle with garlic powder, Italian seasoning and half of the Mozzarella Cheese. Scatter onions over the pizza.

Place meatballs over the top of the pizza, cut side down. Evenly distribute the meatballs. Scatter remaining half of the mozzarella cheese over the meatballs. Sprinkle with Parmesan Cheese.

Place in the heated oven, bake for 12 minutes or until cheese is melted and crust is crisp. Remove from oven, let cool for about 5 minutes. Slice and enjoy!
