A Fabulous Farewell to September

Oh say it isn’t so! September has slipped into the pages of history far too fast. Although we do love October in our house. That crisp chill in the air. Apple picking season. And Halloween. But we are getting ahead of ourselves.

It’s another Fabulous Friday in our house. You know what that means – forgo the red meat or chicken or pork and head to the sea for inspiration. Okay, so sometimes Friday spells cheese pizza, but more often than not it’s all about fish – with our without their shells.

I suppose we could combine our Fabulous Friday Supper with that of a saint whos feast day is celebrated today. The problem with that is there are only 365 days in the year, and there are far more than that many saints. Today is the feast day of nine saints. Does any one deserve recognition more than the other? How do I choose? Don’t get me wrong, I’m not asking for a reduction of saints. No way! One of the things I love about the Catholic Faith is that it encourages us to become saints. Saints are not perfect people. Some of the most interesting saints were some of the worst sinners before answering God’s call. To strive for sainthood isn’t an egotistical thing – it means bending to the will of God and doing for others to the point of sacrifice. Can you imagine what a wonderful world this would be if every person on the planet put every other person’s needs first? If the concept of me, and the question of what’s in it for me never existed – would that be heaven on earth?

Before we get started, do me a favor and don’t look too closely at the photos. The recipe is designed for a family of four. We are a family of three. If you count fish-eaters, we’re down to two. So rather than give you a recipe for two, and let you do the math, I’ll share the recipe in its original form. Although the photos are smaller portions, it’s still a beautiful meal. And actually, this was so yummy Hubby and I were actually looking for seconds! Enjoy!

Cod Fish with Tomato Butter Sauce
1 teaspoon Salt
1/2 teaspoon Black Pepper
1 teaspoon Cumin
1/2 teaspoon Smoked Paprika
1/2 teaspoon Garlic Powder
1/4 teaspoon Chili Powder
4 Cod Fish Filets
2/3 cup Chicken Stock
1/4 cup White Wine
6 oz Cherry Tomatoes
8 tablespoons Butter
Chopped Parsley

In a small bowl, combine the salt, pepper, cumin, paprika, garlic and chili powder. Season cod on all sides, set aside.

In a skillet, over medium heat, cook the stock, wine and cherry tomatoes for 5 minutes or until tomatoes start to burst and release juices. Add butter, cook until butter melts, stirring the sauce.

Once butter melts add the cod. Cook over medium-high heat about 3 minutes on per side or until fish is flakey. DO NOT over cook. Snip parsley, scatter over fish.

Transfer fish to a rimmed serving platter. Pour sauce over cod. Serve and enjoy.

For sides, I chose Haricots verts à l’étouffée (Stewed Green Beans) and Jasmine Vegetable Rice Pilaf. Delicious!
