Today we celebrate the 2nd Day of Christmas. Two Turtle Doves. The Old and New Testaments are filled with references to doves. Two Turtle Doves represent the binding of two Books. The Old Testament lay the groundwork for the New Covenant between man and his maker.
On this the 2nd Day of Christmas, let us give thanks and prayer for the promise of salvation for all.
Heavenly Father, you came to earth through Your Son, Jesus Christ. We thank you. Through our Covenant, may we grow in our intimate relationship with You, our creator.
Let us bear witness to the goodness of God now and forever. Amen.
Today is also the final day of Hanukah. The Jewish People were God’s first children. The Gentiles are reconciled to the God of Abraham through Baptism. We are one people. Halleluiah. Glory be to God now and forever.
For a Child is born to us, and a son is given to us, and the government is upon his shoulder; and his name shall be called Wonderful, Counselor, God the Mighty, the Father of the world to come, the Prince of Peace.

For Christ himself has brought us peace by making Jews and Gentiles one people. With His own body He broke down the wall the separated them and kept them enemies.

A simple meal can be humble yet flavorful. What can be more simple than meat and potatoes? Especially when those are slow cooked together in a single pot? For our 2nd Day of Christmas, this straight forward dish sure hit the spot.

Slow-Cooker London Broil with Red Potatoes
2 lb London Broil
4 tablespoons Ranch Dressing Powder
1 package Au Jus Gravy Mix
6 Pepperoncini Peppers
8 tablespoons Butter
8 medium Red Potatoes
Spray bottom and sides of a 6 quart oval slow-cooker with cooking spray to make clean up easier.
Place London broil in the bottom of slow cooker insert bowl. Sprinkle the ranch dressing mix on the meat. Spread it around so it covers the top. Sprinkle the au jus mix on the meat. Spread it around so it covers the ranch mix.



Remove stems and place the Pepperoncini on top of the powdered mixes. Cut butter, scatter over the top of the London Broil.


Scrub potatoes, add around the outer edge of the meat. They do not have to sit on the bottom. DO NOT add any liquid.

Cover and cook on HIGH for 4 hours or 9 hours on LOW.
Remove meat from slow cooker. Place on a serving platter, slice into 1-inch slices. With a large slotted spoon, remove potatoes and Pepperoncini from the cooking juices. Place Pepperoncini on top of the sliced London Broil for presentation. Arrange potatoes around the sliced meat.

Strain cooking juices into a gravy boat. Serve alongside London Broil and enjoy.
