Have you ever had what you thought was a simple yet delicious idea, and it goes a little sideways? That was the case with these Morning Tacos.
I had the recipe formed in my head – and scribbled it down on paper. When shopping, I told Hubby I remembered seeing Tortillas in the pantry, so there was no need to buy any.
Got home, cooked the sausage, and was moving on to the tortillas when I realized I was right – we had tortillas, but not Burrito Size. These were taco size. Guess what? Just as delicious, but on a smaller scale. The scrambled eggs were bursting out all over. Who cared that there was more filling than tortilla? It was awesome.
So if you are looking for an easy way to serve up an entire breakfast snuggled in a flour taco, this is just what you are looking for. I promise.
Spicy Scrambled Egg Sausage Tacos
6 Breakfast Sausage Links
3 (6-inch) Flour Tortillas
Cooking Spray as needed
1 medium Roma Tomato
2 tablespoons Nacho Jalapeno Peppers
6 Eggs
Salt to taste
Black Pepper to taste
3 tablespoons Spicy Guacamole
3/4 cup shredded Pepper Jack Cheese
Note: This recipe is for my family of 3. It can be adjusted for however many you may be cooking for: Per person 1 tortilla filled with 2 sausage links, 2 scrambled eggs, 1 tablespoon Guacamole and 1/4 cup cheese. Increase tomatoes and peppers per each additional 2 tacos or as desired.
Place sausage links in a small skillet. Add about 1/4 cup of water. Place skillet over medium-high heat, cover and let cook until most of the water has evaporated and the sausage is steam-cooked. Remove lid, let sausage links brown, turning as necessary. Keep warm until ready to use.

Spray tortillas lightly with a little cooking spray. Warm in the skillet just until pliable. Remove from skillet, keep warm until ready to fill.

Dice the tomato and set aside. Dice Nacho jalapeno slices, set aside.

Spray a skillet with a little cooking spray. Place skillet over medium heat. Crack eggs, one at a time, into a ramekin, pour into the skillet. Season with salt and pepper. Let eggs cook until the whites just begin to set. Break yolks, mix eggs together. Add peppers and tomatoes. Scramble into the eggs over low heat. Remove from heat once eggs are fully cooked, cover and keep warm.



Spread a tablespoon of guacamole on each tortilla. Lay 2 sausage links in the center of each tortilla. Top with eggs and cheese.



Fold tortillas over the egg filling like a taco. Serve and enjoy.
We lived in Texas for a few years and love breakfast tacos. I make them as often as I can. These look delicious, great idea to use sausage.

We lived in Texas for a few years and love breakfast tacos. I try to make them as often as I can. That is a great idea to use sausage links.
