Garlic Texas Toast Ham and Cheese Sandwich

Welcome to Tuscan Thursday – when the theme of the day is anything Italian. That is unless it’s Thanksgiving or a Feast Day in the Church or if I don’t feel like making Spaghetti and Meatballs. As it happens, I’m not in a pasta frame of mind.

So instead we turn to the National Calendar. Hum, let’s see what we’ve got. It’s National Chia Day. Yeah, I know Chia seeds are one of the most nutrient-rich foods on the planet. It’s the seed of an herb native to Mexico, not to be confused with Chai tea, a black tea popular in India. Either way, I’m just not in the mood to be healthy.

Today is also National Tamale Day. Kiddo and I love tamales, Hubby not so much, unless I serve it Enchilada Style. Have you ever had Tamales Enchilada Style? Amazing – but again, not in the mood.

So, let’s see what else we’ve got – it’s National Chip and Dip Day. I will confess, as I write this post I’m munching on an amazingly hot Habanero Dip with Corn Chips. It’s made with a blend of sour cream, mayonnaise and a dip mix we get from a company called Double Dippin. Their powdered dip mixes rock – everything from Caramelized French Onion Dip to Vicious Citrus. We get our from their booth at some of the local fairs, but now you can also get it on line. That’s the one positive thing to come out of the Pandemic – it was the only way the company could stay afloat when street fairs were banned. While we still look for their booth at the county fairs, it’s nice to know we can get more anytime.

Finally today is also National Melba Toast Day. I know, Melba toast is a dry, crisp thin slice of toast and a far cry from Texas Garlic Toast, but work with me here. Texas Bread all buttery and kissed with garlic is amazing to use as a base for Grilled Ham and Cheese Sandwiches. My guys loved these warm and oh so satisfying grilled sandwiches. Family friendly, easy to whip up and cut into bite-size pieces are perfect for game night. Enjoy!

Garlic Texas Toast Ham and Cheese Sandwich
8 slices Garlic Texas Toast
4 slices Monterey Jack Cheese
8 slices Black Forest Ham, thin sliced

Heat oven to 350-degrees.

Line a rimmed baking sheet with parchment paper. Place 4 slices of the Garlic Texas Toast on the prepared baking sheet. Cut each slice of Monterey Jack Cheese in half. Fold each slice of ham in half or thirds to fit neatly on the Garlic Toast.

Place a half a slice of cheese on each slice of toast on the baking sheet. Top cheese with 2 slices of folded ham, followed by another half slice of cheese. Finish with remaining four slices of Garlic Toast.

Place in the oven and bake for 6 minutes. Turn sandwiches over, continue to bake for another 6 minutes or until toasted and warmed through.

Serve and enjoy.

Great with Air-Fryer Tater Tots for a quick yet satisfying supper.
