Every year, on the third Friday in May, the powers that be declair it to be National Pizza Party Friday. Great. They couldn’t declair the third Saturday instead? No, it has to be Friday.
For old school and traditional Catholics, Fridays are days of penance. So, we could pray an extra Rosary (which shouldn’t be regarded as penance in the first place), dig a little deeper when giving to charity (always a good idea) or forgo the meat toppings on our Pizza. That’s fine, right?
I guess it really depends upon who you ask. I’m not wild about pizza in the first place, so a cheese pizza is fine by me. Hubby would vote to load on the meat and open his wallet. As for Kiddo, well he’s becoming a work in progress. Kiddo doesn’t consider himself Catholic these days, and as much as I’d like to correct him, I believe it’s best to lead by example; hold up the light and pray he finds his way home again. This is true for all life’s lessons. We should strive to lead by example.
Oh, and gathering the family in the kitchen to cook up an all-cheese pizza together doesn’t hurt, either. Those are memories in the making. Happy Friday everyone!
Super Easy All Cheese Pizza Party
1 lb Refrigerated Pizza Dough
2-1/2 tablespoons Olive Oil
3 Garlic Cloves, finely minced
16 oz fresh Mozzarella Cheese
8 oz Ricotta Cheese
1/2 cup Parmesan Cheese
1/2 cup Italian Cheese Blend with Romano Cheese
Kosher Salt to taste
1-1/2 teaspoons Italian Seasoning
Red Pepper Flakes to taste
Heat oven to 450-degrees. Dust a pizza pan with cornmeal. Place pizza dough in the center of the pan. Stretch, pull, push the dough out with fingertips to an even layer in the pan. Brush with olive oil and set aside.
Peel and finely mince garlic, sprinkle over the dough. Shred fresh Mozzarella Cheese, scatter over the curst. Set aside.
In a small bowl, blend Ricotta Cheese, Parmesan Cheese and Italian Blend. Season with salt. Dollop Ricotta mixture all over the pizza dough. Sprinkle with Italian seasoning and some red pepper flakes.
Place in the oven to bake until cheese is melted and all gooey and bubbly. Remove from oven, let cool for a few minutes, then slice and serve
