Can Dinner Be This Easy?

Sometimes the answer to that question is yes, it can. And thank goodness, because life as of late has not been easy.

Can I complain for just a moment? I have shared a post every day for over 800 days. That’s a lot. It’s not always easy to come up with a recipe to share or something to comment on. I know that there are times when I get a bit gloomy – for that I am truly sorry. Be warned. This might be one of those gloomy moments.

I believe in God and the goodness of people. But there are times, especially lately, when the world seems so turned upside down that it makes me sad. I know it’s corny, but when I get sad, taking care of my family, trying out a new recipe, discovering something new (even if it’s simple) brings a sense of joy and calm. I know the experts say in order to take care of others, you need to take care of yourself first. That’s something I don’t get. But then again, I do. While I’m not saying this is strictly a woman’s slippery slope, I know a lot of women who put husband and family first. From there, it’s the PTA, the church, community, this committee, that group, this need, that obligation. Sure, I can handle that. Pile it on, no worries. No is not a part of the vocabulary. And the next thing you know, you’ve snapped.

Don’t mind me, I’m just picking up the pieces.

Hum, strange where your mind can go sometimes. All I know is that when you have a lot on your plate, it’s a good thing all these modern conveniences are here to simply life. Can you imagine feeling obligated to be the Mother Theresa of your neighborhood and after that spend hours in the kitchen? Or to be in a bad mood and struck in a hot kitchen? Modern conveniences are nice.

Air Fryer Ranch Pork Chops
4 boneless Pork Chops, about an inch thick
Cooking Spray as needed
4 tablespoons Dry Ranch Dressing Mix

Place pork chops on a plate. Lightly spray both side with cooking spray. Sprinkle both sides with ranch seasoning mix. If desireded, give a second coat, then let sit at room temperature for about 15 minutes.

Spray the baskets of an air fryer with cooking spray. Set AIR FRY, 390 DEGREES, 15 MINUTES. Let baskets warm for 5 minutes.

Place chops in the heated air fryer, working in batches if necessary, to ensure fryer is not overcrowded. Cook chops for 5 minutes, Flip chops, cook an additional 5 minutes. Let pork chop rest for 5 minutes, tented to keep warm.

Note: If cooking in batches, keep cooked pork chops warm in an oven on the lowest setting. For thicker chops, add an extra minute or two of cooking time, for thinner chops, decrease time by a minute or so.

These pork chops were thick, so I cooked them 6 minutes per side – came out perfectly cooked yet moist and delicious.

While the pork chops are preped, cooking and then resting, you’ll have time to whip up a few sides such as green beans and rice pilaf. What a beautiful meal.
