Autumn and Smoky Chicken Salad

On the National Stage, today is Candy Day. I don’t know that I understand Candy Day four days removed from Halloween. Perhaps its out of respect for All Saints and All Souls and to give parents a chance to sort through the candy. In any case, Happy Candy Day!

It’s also Color the World Orange Day. Seems a little late to enjoy the fall colors, but when I think of hues of Orange, I think of all the vineyards, Almond and Walnut orchards that surround us here in this part of California.

Finally, the first Saturday in November is National Bison Day. Traditionally, we grill up some yummy Bison Burgers, although I get the impression eating Bison is not the real purpose of the day.

I don’t know how things are in your neck of the woods, but here the weather is a little crisp, yet still nice enough to enjoy a walk in nature and have a picnic as we watch the leaves fall. These Smoky Chicken Sandwich are just the thing.

Smoky Chicken Salad Sandwiches
1 Smokehouse Style Rotisserie Chicken
2 Celery Ribs
1/4 Yellow Onion
1/4 cup Mayonnaise
1/4 cup Miracle Whip
Mesquite Seasoning to taste
Black Pepper to taste
Pinch Cayenne Pepper or to taste
6 Green Leaf Lettuce Leaves
1 large Roma Tomato
6 large Croissant Rolls

Remove all the skin from the chicken, pull meat from the bones. Chop chicken meat into small pieces, place in a mixing bowl and set aside.

Finely dice celery and onion, mix together in a small mixing bowl. Add Mayonnaise, Miracle Whip and seasonings. Taste dressing and adjust as desired. If the spread appears too dry, add a little more mayo or Miracle Whip. Pour dressing over the chicken. Gently fold to combine. Set aside.

Break off lettuce leaves, rinse, pat dry and set aside. Thinly slice tomato into 12 rounds, set aside.

With a serrated knife, slice open the croissant rolls like a bun. Lay lettuce leaves and tomato slices on the bottom half. Top with a nice scoop of chicken salad, spread out evenly. Place top of croissant roll over the chicken. Arrange on a platter, garnished with parsley and cherry tomatoes if desired for a pretty presentation. Serve and enjoy.
