Good morning to you! Today we must acknowledge this day in history and this day for God’s Chosen People. It is December 7. Eight-two years ago today war was delivered on our doorstep and America could no longer sit on the sidelines.
Let us bow our head for a moment, and pray that the horrors of a global conflict not be repeated. These are frightening times. God be with us all.

Today is also the first night of Hanukkah (Chanukah), the Jewish Festival of Lights. The Hebrew word Chanukah means “dedication”, and this time is thusly named for the rededication of the Holy Temple. The lighting of candles for 8 nights is a retelling of the miracle of the oil, that should have only lasted a single night, yet it lasted for 8 nights through God’s blessings. If you are looking for this story in the Old Testament, you would need a Catholic Bible that has retained the books of Maccabees. To God’s Chosen People, may He bless you and keep you safe. May His peace come upon the world, but in particular to Israel.

Finally, let’s talk about what is most near and dear to my heart – and that is the magic of family. I was fortunate to grow up in a very close, loving extended family. I was also blessed to have grown up in a time that was a bit slower – when children had more free time. My brother played baseball. We girls joined Girl Scouts. But there was still a lot of free time to simply be children without an addenda or schedule to adhere to so strictly. I’m not sure which is the better way, or when it was decided that every waking moment of our lives needed to be scheduled.
Breakfast is such an important part of family time. Yet it’s one that is so often missed. So often we’re heading out the door, no time to stop for breakfast. There’s work, and school or sporting events, competitions, meetings and on and on it goes. One of the biggest reasons Hubby and I have always attended the first Mass on Sunday mornings even when Kiddo was small is so that we being our day with the Lord, then come home and have family breakfast before letting the outside world in. When Kiddo was growing up, I was a stay-at-home parent, so we had breakfast together every morning, the two of us. I grew up in a time when most households were a one-income family. That was a blessing in so many ways.
There I go again, wandering off! These French Toast Roll Ups are perfect for families on the go. They are quick and easy to make. If you have the time, sit, relax and enjoy the morning together. If not, pick up and head out the door – eat (and dunk) on the way.

Sausage Stuffed French Toast Roll Ups
12 Sausage Links, fully cooked
12 slices White Sandwich Bread
3 Eggs
1/2 cup Milk
1 teaspoon Vanilla
1/2 teaspoon Cinnamon
Maple Syrup for dipping
Note: Jimmy Dean’s Fully Cooked Link Sausage is perfect for this recipe. It warms up easily and is just the right size, with plenty of flavor.
Cut a slit in the package of fully cooked sausage links for venting. Place in the microwave for 2 minutes to heat. Remove and set aside. Trim crusts off the bread. Using a rolling pin, flatten each piece of bread, set aside.
In a shallow bowl, whisk eggs, milk, cinnamon and vanilla. Warm a skillet on medium heat. Lightly coat the skillet with butter or margarine.
Place a cooked sausage link at one end of a flattened slice of bread. Roll bread over the link, crimp to seal. Repeat until all the links are wrapped in bread.


Gently roll the bread wrap in the egg mixture, let any excess egg drip back into the bowl. Place roll ups in the warmed skillet, seam side down. Allow to fry for a few minutes, until golden brown. Give a quarter turn, continue to grill until all the sides are golden.




Serve on a warmed plate with maple syrup for dipping and enjoy.
