Today is National Potato Chip Day. I have this really cool slicer just for making your own potato chips. In all the years I’ve owned it, haven’t made potato chips once. But it does work well to get the most amazing paper-thin onions ever.
No, on National Potato Chip Day I generally like to serve up something that goes nicely with a bag of chips, like an Italian Sub Sandwich. Lately I’ve really been into grilled cheese. Don’t have a clue why that is. For New Year’s Eve kiddo and I put together an amazing Cheese Board. Be it fortunately for us or unfortunately, depending upon how you want to look at it, there was a lot of sliced cheese left over at the end of the night. Hubby keeps reminding me to think about your audience. Not everyone likes goat cheeses or Truffle Cheeses or Purple Moon Cheeses – I could go on and on. The sliced Cheddars and Monterey Jacks went quickly, as did the Mozzarellas. The fancy stuff, not so much. Which was fine, Kiddo and I ate the cheese for snacks, put it in Omelettes, and even made Goat Cheese and Brie sandwiches. Once all the fancy cheese was gone, I started having cheese withdrawal!
Just because the only cheese in the house at the moment happens to be American Processed Cheese (is that really even a cheese?), doesn’t mean we need to settle for a boring Grilled Cheese Sandwich for Potato Chip Day. No, we can jazz things up nicely. Yum! And who knows, maybe next year I’ll even make my own chips.
Jalapeno-American Grilled Cheese Sandwich
1/4 Red Onion
1 large Jalapeno Pepper
4 tablespoons Mayonnaise
8 slices White Bread
8 slices American Cheese
Potato Chips for Serving

Heat griddle to medium-low heat. Peel and slice onion into thin slivers. Stem jalapeno, slice into thin rounds. Set aside.
Lay bread out on a cutting board. Spread about a half-tablespoon mayonnaise over four slices of bread. Place bread, mayo-side down, on the warm griddle. Top bread with a slice of cheese, then onion slivers and a sprinkling of jalapeno peppers. Top with another slice of cheese and remaining slices of bread. Brush tops of the bread with remaining mayonnaise.





Grill until golden and the cheese as begun to melt. Flip, continue to grill until the underside is golden and cheese has melted.

Serve with chips and enjoy.
