It must be a Mellow Day. Mondays at home need to be mellow for two very good reasons. First off, weekends are usually busy. There are the household chores, and the fun stuff sandwiched in-between. Monday is the first work day, so that’s always a bummer.
I try to keep things mellow at home. You know, keep the meals simple, maybe plan a little time by the pool. Let Hubby get his bearings. Whenever we go to the pool, we always have this same silly conversation. We’ll lay the towels out on the loungers, and he grabs the one closest to him no matter which towel is laid out. I tell him he has the wrong one – he’s a boy, so he needs the boy towel. So, a turtle on the towel is for boys and the sun for girls? No, silly. Blue is a boy’s color, yellows are for girls. He thinks I’m crazy. Maybe I am. Still, he listens.

The great thing about skillet suppers is that I can prep everything before heading out to the pool, then throw it all together when we get back. Summertime and late suppers just go together.
Just a quick comment before we cook – this recipe called for an entire jar of roasted red bell peppers plus the liquid. I will admit, I was hesitant – would that be the only thing you tasted? This was delicious. The peppers brought a certain somethin’-somethin’ to the blend of flavors without demanding center stage.
Sloppy Joe Noodle Skillet
1 (12 oz) jar Roasted Red Bell Peppers
1 medium Yellow Onion
1 lb Ground Beef
1 (1 oz) package Dry Sloppy Joe Seasoning Mix
1 (15 oz( can Tomato Sauce
1 (15 oz( can Diced Fire Roasted Tomatoes
12 oz Rotini Pasta
1-1/2 cups Beef Stock
Drain bell peppers, reserving the juices. Dice peppers and set aside. Peel and dice onion.
In a large skillet, cook ground beef over medium-high heat until beef is cooked through, breaking up the meat as it cooks. Drain well.

Add Sloppy Joe Seasoning Mix, tomato sauce, roasted tomatoes, onions and diced bell peppers along with their reserved juices. Stir to combine.


Bring to a boil over medium-high heat. Add uncooked Rotini Pasta, and about a cup of the beef stock. Make sure the pasta is submerged in liquid. If not, add more stock. Cover, reduce heat to medium and cook for 20 minutes or until pasta is tender. Stir occasionally to prevent scorching. For a quick side, serve with green beans and enjoy.
