The Magic of Words

Do you love books? I do. I love learning. Even fiction can weave a few lessons by allowing us to walk in someone else’s shoes if only in our imagination. Today is National Book Lovers Day. Unfortunately, we cannot eat the books we love.

But we can whip up something delicious from the leftovers in the kitchen, brew up a pot of coffee, find that cozy spot with good lighting and curl up with our favorite characters. There is only one thing that I like better than reading, and that’s writing. I’m one of those people who keeps a notebook handy to jot down thoughts, ideas, feelings – whatever pops into my rather scrambled brain.

As we speak I am in the middle of drafting 11 different posts for this blog while reading 5 different books and researching an idea for a book of my own. Words are amazing. Words can comfort us. Words can transport us to different worlds or different times. Words can paint a picture much like the strokes of an artist on a blank canvas, breathing life into something that did not exist before. God created everything simply with His Words. Let there be light, and there was light.

Words can also harm, hurt, hinder and destroy. Words spoken in anger can never be taking back again. Words are powerful persuaders. Take care with your words.


I know today is a Friday. Let’s pretend it’s any day but Friday. Let’s stick our heads in the fridge and see what we can whip up before settling down with a book. Hum, I see some left-over taco meat, left-over Tex-Mex Enchilada Sauce – oh and some yummy Mexican Parmesan (aka Cotija Cheese). Sounds like the beginning of an amazing Omelette just for me.

Enchilada Omelette for One
2 Eggs
Salt to taste
1/2 cup Tex-Mex Red Enchilada Sauce
1/2 cup Taco Meat
2 tablespoons Cotija Cheese
Olive Oil

Crack eggs into a small blender, whip to blend. Season with a pinch of salt and set aside.

Place enchilada sauce in a microwave safe bowl. Place taco meat in another microwave safe bowl. Sprinkle cheese over the meat. Warm in the microwave for 2 to 3 minutes.

Pour just a little olive oil in a omelette pan or small skillet. Swirl to coat the bottom of the pan. Warm gently over medium heat.

Pour eggs into the pan. Immediately reduce heat to medium-low. Shake and tilt the pan to spread out the eggs. Continue to shake, letting eggs firm up around the edge. Gently life one side, letting the uncooked egg slide under the cooked portion. Continue to cook, shake and lift until the omelette is almost cooked through.

Top one side of the omelette with the taco-cheese filling. Fold omelette over; slide onto a plate. Pour warmed enchilada sauce over the entire omelette. Enjoy with a nice cup of Mexican Cinnamon Coffee.
