Saint Teresa of Calcutta

Today is the feast day of Saint Teresa of Calcutta. As Catholics, we are encouraged to strive for sainthood. While that’s a lofty goal most of us will not obtain, we are truly blessed to be surrounded by inspiration. Mother Teresa is one such example of what it means to give all for the Lord.

Growing up as I did, with images of the First Family attending Mass, I felt special to be Catholic. That is not to take away from Protestants or Jews or any other expression of faith. I am speaking from my heart, a heart that speaks to the Lord.

God created each of us with love and a purpose. The rest is up to us. He has given us the tools for greatness. Greatness does not mean becoming famous or rich or powerful. Our greatness might only impact a single person who goes on to impact two others and so on until that smile or simple act of kindness has made a difference in the world.

Lord, grant that I may make a difference and leave this world a better place for having surrendered to Your will.

Sausage Ravioli with Italian Sausage Sauce
1 package Sausage-Filled Ravioli
1 lb bulk Mild Italian Sausage
2 mini Orange Bell Peppers
3 Garlic Cloves
Portabella Mushrooms
1 tablespoon Butter
1 tablespoon Olive Oil
1 (24 oz) jar Spicy Marinara Sauce
1/4 cup Red Wine
Parmesan Cheese for garnish
Fresh Oregano Sprigs for garnish

Bring a pot of salted water to a rolling boil. While the water comes to a boil, heat a skillet over medium-high heat. Crumble sausage into the skillet, brown until no longer pink, about 15 minutes. Drain well, set aside.

As the sausage browns, dice bell peppers and mince garlic. Clean and slice mushrooms. Set aside until ready to use.

In the same skillet used for the sausage, melt butter with olive oil over medium-high heat. Swirl skillet to blend. Add bell peppers, sauté for about 5 minutes or until tender-crisp. Add mushrooms, cook until they release their liquid. Stir in garlic and sauté until fragrant, about 30 seconds longer. Return meat to the skillet.

Pour marinara sauce over meat mixture, stir to combine. Add wine and stir again. Bring meaty sauce to a full boil, reduce heat and summer unit ready to serve.

Cook ravioli according to package directions. Remove with a slotted spoon, place on paper towels to absorb excess water. Place ravioli in a large serving dish.

Pour meat sauce over the ravioli. Sprinkle wit Parmesan cheese, garnish with oregano sprigs.

Serve wit warm garlic bread and enjoy.
