Oh Yea! It’s Pepperoni Pizza Day

If you are going to have Pepperoni Pizza, then don’t skip on the Pepperoni. Growing up I thought there was only one kind of Pizza – Pepperoni. And there was only one place to get it – under the Red Roof of Pizza Hut.

Sadly, today most Pizza Huts are take out only, tucked into strip malls. Oh but I can remember after the game on a Friday we’d all pile into a few cars and make a caravan run to Pizza Hut. The best pizza, great company and fun. While the generation ahead of us had their Malt Shops, we had our Pizza Parlors.

Today is National Pepperoni Pizza Day. My guys love their pizzas – Kiddo a combo with Feta Cheese (yeah, I like that too) while Hubby is straight forward with Sausage and Mushrooms. I’m still a Pepperoni Gal at heart, so today is really my day.

Garlic Butter Pepperoni Pizza
1 tablespoon Corneal
2 tablespoons Butter
1 tablespoon Roasted Garlic
1 (14 oz) refrigerated Pizza Dough
1 (12 oz) jar Pizza Sauce
2 cups Mozzarella Cheese, divided
5 oz Mini Pepperoni Slices

Heat oven to 400-degrees. Dust a round pizza pan with cornmeal, set aside. In a small bowl, mix softened butter with roasted garlic. Set aside.

Roll pizza dough into a ball. On a piece of parchment paper, roll dough out into a circle slightly larger than the pizza pan. Invert dough onto the prepared pan. Crimp overhanging dough to create a raised edge. Brush dough, including edge, with butter. Place in the oven to par-bake for 6 minute.

Remove crust from the oven, close oven door to retain heat. Spread pizza sauce over the crust to the edge. Scatter half of the cheese over the sauce, followed by all the pepperoni, then remaining cheese.

Return pizza to the oven, continue to bake another 7 minutes or until the edge of the crust is golden, the sauce is bubbling and the cheese is nicely melted.

Let cool for a few minutes, then slice and enjoy.
