More Than One Way to Slice a Mushroom

Once upon a time, about a million years ago, my pantry was filled with Hamburger Helper, Tuna Helper and canned everything. It was both cheap and quick. Going to school, raising two small children and working full time, I used every shortcut I could find.

While this “Poor Man’s Beef Stroganoff” isn’t made from a box that just requires ground beef, it does rely on the same meat source. Although these days at $5.00 a pound, you can’t call ground beef cheap. And the good stuff can be twice that. Yeah, it takes a lot to feed a family. Hubby and I count our blessings every day that we are still hanging in there. We do what we can to help out with donations to the Church Food Closet each month.

Today is National Mushroom Day. That got me to thinking about all those nights when I’d add canned sliced mushrooms to my Stroganoff Hamburger Helper for an extra treat. These days we don’t use Hamburger Helper. But I thought it might be fun to revert back to that ground beef version of a family favorite, with real mushrooms and genuine sour cream.

Poor Man’s Beef Stroganoff
1 (12 oz) package Egg Noodles
1 lb Ground Beef
1 teaspoon Onion Powder
Salt to taste
Black Pepper to taste
10 oz White Mushrooms
1 teaspoon Vegetable Oil
10 oz Ceram Mushroom Soup
1/2 cup Beef Stock
1 cup Sour Cream
Chives for garnish

Bring a pot of salted water to a boil. Cook egg noodle pasta al dente. Keep warm until ready to serve.

Meanwhile, heat a large skillet over medium-high heat. Coo ground beef in the skillet until browned, crumbling into small pieces as it cook. Drain and discard grease. Season ground beef with onion powder, salt and pepper.

As the meat cooks, clean and slice the mushrooms. Heat vegetable oil in a separate skillet over medium heat. Sauté mushrooms in the hot oil until tender, about 5 minutes.

In a bowl, whisk together mushroom soup, beef stock and sour cream. Add sautéed mushrooms to the bowl. Pour the mushroom mixture over the browned ground beef. Cook, stirring often, until heated through.

Spread egg noodles out in a large serving bowl. Pour Ground beef Stroganoff over the noodles. Garnish with snips of chives just before serving.

Delicious with Green Beans.
