One Amazing Saint

Today is the feast day of a beloved man many saw as a saint while he was still alive. Like Mother Teresa, Pope John Paul II was a beacon in the darkness. For the better part of my adult life, he was our Pope.

John Paul II not only demonstrated with his life how to live in faith, he showed us how to die with dignity, trusting in the Lord always. Karol Jozef Wojtyla made history when he was elected Pope in 1978 as the first non-Italian Pope in 400 years. He left us with many words of wisdom and inspiration.

When the light fades or vanishes altogether, we no longer see things as they really are.

True joy is a victory, something which cannot be obtained without a long and difficult struggle.

The great danger for family life, in the midst of any society whose idols are pleasure, comfort and independence, lies in the fact that people close their hears and become selfish.

It should come as no surprise that under his pontificate the Catholic Church greatly expanded its influence in Africa and Latin America while retain influence of the rest of the world. As pope, John Paul II wrote 14 Papal Encyclicals. Unlike Pope Francis, a Jesuit, Saint John Paul II was conservative on doctrine, human reproduction and the ordination of women. He was also outspoken on his opposition of the death penalty.

I feel truly blessed to have had the privilege of having such a great humanitarian lead me during my formative years as a Catholic adult. God often bring people into focus to help guide us closer to Him. Thank you, Jesus.


So often side dish recipes aren’t given a chance to shine. This is one of my favorite sides simply because it’s your starch (potatoes) and your veggies (the green beans). Hope you enjoy.

Italian Red Potatoes with Green Beans
6 medium Red Potatoes
12 oz fresh or frozen Whole Green Beans
1/4 Red Onion
1/3 cup Water
1/2 cup Zesty Italian Salad Dressing

Cut potatoes into quarters. Place potatoes into a pot and cover with water. Add a little salt to the water, bring to a boil. Reduce heat, cover and cook for about 10-15 minutes or until potatoes are fork-tender.

Meanwhile, trim green beans and set aside. Peel and dice a quarter of a red onion, set aside.

Place the beans and water in a 2-qt. microwave-safe dish. Cover and microwave on high for 6-8 minutes or until tender. Pour Italian dressing into a small sauce pan. Add onions and warm gently.

Drain beans and potatoes; place in a serving bowl. Pour dressing over vegetables, toss to coat. Serve hot.
