Good Morning All!

Today is going to be a very busy day at our house. We are hosting an early Thanksgiving for my sister, Jaquex and her entire extended family. I’ll share all the festivities later.

On special days such as Easter Morning, Christmas Morning or Thanksgiving I like to start the day with a simple yet sweet breakfast. Easter is traditionally Cinnamon Rolls. Christmas is Blueberry Muffins and Thanksgiving a pastry of some kind.

This recipe referred to the final morsels as a Danish Roll. There was nothing Danish Roll about it. They were sweet biscuits made with Bisquick Mix. What is a sweet biscuit but a Scone. So I renamed the recipe Drop Scones. It’s a better description.

We used Blackberry Preserves from a local Cottage Kitchen Fair. So delicious! You could use Apricot or Strawberry preserves – whatever you have on hand that you like it perfect. Enjoy!

Drop Scones with Fruit Preserves
Drop Scones
4 tablespoons Butter, softened
2 teaspoons Sugar
2 cups Bisquick Baking Mix
2/3 cup Milk
Fruit Preserves as desired

Note: Apricot, Strawberry or Blackberry Preserves work best. Make all one flavor or an assortment of each as desired.

Heat oven to 450-degrees. Lightly grease a cookie sheet, set aside.

In the bowl of a stand mixer, cream butter, sugar and Bisquick mix together until crumbly. Stir in milk until a dough forms. Beat 15 strokes to combine.

Remove bowl from the mixer. Roll a heaping teaspoon of dough into a ball, place 2 inches apart on the prepared pan. With the knuckle of your index finger, create a well in the center of each rounded Danish. Fil well with a teaspoon of preserve.

Place in the heated oven, bake for 8 minutes or until golden and beautiful.

While the scones bakes, make glaze.

Vanilla Glaze
2/3 cup Powdered Sugar
1 tablespoon warm Milk
1 teaspoon Dark Mexican Vanilla

In a small bowl, whisk powdered sugar with warm milk until sugar has dissolved. Whisk in vanill, set aside.

While the Danish is still warm, drizzle with graze. Transfer to a serving platter. Serve with fresh coffee or juice and enjoy.
