US Coastguard Day

Before we get into all this day means on the National Stage, I want to wish the best Hubby on our entire street a very Happy Birthday. In my opinion, he’s the best Hubby on the planet, but other wives out there might tend to disagree. So I’ll say our street.

Never mind that our street consists of four houses including our. And we’re the only married couple. We’ve got a group of young people Catty-Corner to us, a single lady just across the street and a retired widowed veteran next door. There is no disputing Hubby’s the best husband on our street. I’d feel that way even if the street were overrun with husbands, but I’m a bit bias after nearly 40 years of marriage.


Today is also National Coast Guard Day. When I think of the Coast Guard, I remember a warm summer’s evening many years ago. We had met my sister and her then boyfriend for dinner along the river not far from the airport. Overhead we could hear the sound of a plane’s engine as it flew back and forth down the river, dumping its fuel. My sister was outraged – polluting the water like that!

“Would your rather he dump his fuel over the houses around the airport?” Her boyfriend asked.

“I don’t see why he has to dump it at all. Planes land all the time with fuel.” She insisted.

“Look at the plane.” I said, pointing toward it as it made yet another pass. “There’s only one wheel down. He’s making an emergency landing, and would rather not do it will a full tank of jet fuel.” Then she understood.

We watched and waited as the plane dropped from view. No explosion followed. No big plume of smoke. We could only assume that the Coast Guard Plane had managed a rough but survivable landing. Praise be to God.

As long as we’re celebrating the US Coast Guard, let’s do so with the most iconic American Food I could think of – the Hot Dog!

As You Like It Hot Dog Bar
1/2 large White Onion
2 large Cajun Bell Peppers
1/2 large Red Onions
Spicy Sweet Pickle Chips
Fresh Jalapeño and Serrano Peppers
Cherry Tomatoes
Dill Pickle Relish
Nacho Cheese Sauce
Ketchup
Spicy Brown Mustard
4 Quarter-Pound All Beef Hot Dogs
Hot Dog Length Sesame Seed Sausage Rolls
1 (16 oz) can Spicy Chipotle Baked Beans

Cut white onion in half from root to tip. Reserve half for another purpose. Peel remaining half. Slice the onion into thin slivers, break apart. In a dry skillet over low heat, grill white onion until beautifully browned. Transfer to a section of a condiment caddy. While the onions are grilling, stem and thinly slice Cajun Bell. Once the skillet is empty, grill bell slivers. Once grilled, place on the caddy.

Cut red onion in half from root to tip. Reserve half for another purpose. Peel and dice remaining half. Place diced onion in caddy. Dry pickle chips on paper towels, cut into smaller pieces and place in a section of the caddy. Stem and dice the fresh hot pepper, place in the caddy. Dice tomatoes, place in another section. Serve pickly relish with a spoon straight from the jar. Warm Nacho Cheese Sauce, place in a small squeeze bottle. Remaining condiments can be served from squeeze bottles. Arrange all the fixings for the bar with easy access.

Grill hot dogs in a skillet or over a medium-high grill until cooked through and nicely blistered. If there is a spot for the dogs on the caddy, use that. If not a shallow bowl or platter will be fine.

While the hot dogs are grilling, split the buns and warm the beans for serving.

Let everyone build their dogs just the way they like them with beans on the side. Then grab your favorite soft drink or draft beverage and enjoy an all American favorite.

This was my creation with spicy brown mustard, grilled onions, Cajun Bells, diced tomatoes, spicy sweet pickles and Nacho Cheese. Wow – so delicious!
