What can be better than a TV Dinner when you don’t feel up to cooking? One that is made by you. I don’t know about you, but rarely can I make a dinner without some leftovers. Sandwiches, burgers, hot dogs – those I can make for a one-and-done supper. The rest? Impossible.
Remember way back in August (yeah, that long ago) when we headed up the Oregon Coast? The days leading up to our departure the last thing I wanted to deal with were left-overs that would need to be tossed out. Rarely do I freeze them, although I really should.
The expectation was the meatless Spaghetti. With or without meat, spaghetti does freeze up nicely. The beauty of meatless spaghetti is that you can always add a meaty sauce when reheating or in this case Meatballs for a casserole dinner. So while today might be National TV Dinner Day, we can still enjoy a home-cooked supper.

Spaghetti Dinner Round Two
3 cups Spaghetti in a Red Sauce
16 oz frozen Mini Meatballs
1 (24 oz) jar Marinara Sauce
¼ cup Red Wine
Red Pepper Flakes to taste
Note: If frozen; thaw Spaghetti in the refrigerator overnight.
Heat oven to 350-degrees. Spray a casserole dish with cooking spray. Spread Meatless Spaghetti out in the prepared dish, set aside.

In a saucepot empty meatballs. Add marinara sauce. Rinse out the empty sauce jar with wine. Scatter pepper flakes over the sauce.

Warm gently over medium heat for about 10 minutes. Pour meatballs in the spicy marinara sauce over the spaghetti in the casserole dish. Spread out over the top of the pasta. Cover and place in the heated oven to bake for 20 minutes or until heated through.

Remove from oven; pull spaghetti pasta through the warmed sauce and serve straight from the casserole dish. This easy supper is perfect with warm garlic bread and an simple salad.
