Another Slow Cooker Day

Before we get to cooking, I want to wish my bouncing baby boy a very happy 50th Birthday. Wow, that kid is old! Oh wait, I guess that makes me even older. Love you sweetie!

Originally I had planned to make some amazing Slow Cooker Ribs as part of Home Baked Bread Day. I’m not much of a baker, as most of you know by now. But I can whip up some delicious Cornbread – from the North and the South.

Yeah, it’s a bread, right? And you’ve got to have some sweet, creamy butter with cornbread. So that seemed to fit the bill just fine. Except for one tiny thing – I served these falling off the bone ribs with Cornbread made from a mix. A place called Famous Dave’s Barbecue recently opened in our little town. It’s fast becoming our favorite casual restaurant. Imagine my surprise (and thrill) to find their cornbread muffins are available in a mix! In true Famous Dave’s style, we served our ribs, cornbread muffins and a pot of grilling beans for that authentic down home goodness. So, does using a box mix count as baking? I think so. But I’ll let you be the judge of the entire Down Home Supper.

Slow Cooker Memphis Rub Baby Backs
Memphis Rub
3 tablespoons Brown Sugar
2 teaspoons Chili Powder
2 teaspoons Smoked Paprika
1 teaspoon Kosher Salt
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon dried Thyme
1/4 teaspoon Chipotle Chili Powder
Pinch Cinnamon

In a small bowl mix together all the ingredients. Set aside until ready to use.

Note: Rub can be made in advance, kept in a airtight container.

Baby Backs
2 racks Baby Back Rigs
2 cups favorite Barbecue Sauce

Trim ribs, remove sliver membrane from back. Rub ribs with seasoning mix. Wrap in plastic wrap, let flavors develop overnight.

Cut ribs as needed to fit into slow cooker. Cover and cook on low for 8 hours.

Heat broiler element of oven. Place cooked ribs on a rimmed baking sheet. Brush generously with barbecue sauce. Broil ribs for about 3 minutes or until lightly browned.

Serve with additional barbecue sauce and enjoy. Great with cornbread muffins, honey butter, Ranch Beans. Add a little shredded rib meat to the beans for an amazing new texture and taste.
